Preparation And Properties Evaluation Of Bifidobacterium Breve Microcapsule Milk Tablets

Bifidobacterium can improve human intestinal flora,and is widely used in food industry and dairy industry,which is beneficial to human health.The results showed that as the dosage form of probiotic products,the tablets were easy to eat and carry,stable in quality,and easy to preserve.In this experiment,the probiotics microcapsules embedded in pectin were used as the main raw materials,and various excipients were added.In this experiment,bifidobacterium brevis microcapsule milk tablets were prepared by wet granulation method and the best formula of bifidobacterium brevis microcapsule milk tablets was determined.Among them,white granulated sugar was added 9.21%,whole milk powder was added 51%,strawberry powder was added 20.21%,microcapsule freeze-dried powder was added 2%,magnesium stearate was added 2.5% and skim milk powder was added 15.08%.In this condition,the weight of each Bifidobacterium brevis microcapsule milk tablet was 0.36 g,the diameter was 1.00 cm,the thickness was 0.68 cm,and the fragility was less than 1%.After simulating human digestive tract test in vitro,the bacterial concentration of Bifidobacterium brevis nude bacteria milk tablet decreased by 4.96 orders of magnitude,which was 4.19±0.12 lg CFU /g.However,the concentration of bifidobacterium breveum microcapsule milk tablets only decreased by 2.94 orders of magnitude,which was 6.33±0.14 lg cfu/g.Bifidobacterium brevis microcapsule milk tablet was proved to be stable by acceleration test.The shelf life test of Bifidobacterium short microcapsule milk tablets showed that it could be stored for 150 days at 4?,and the number of viable bacteria during storage was in line with the corresponding national standard.The data showed that at room temperature and 4? storage temperature,bifidobacterium brevis microcapsule milk tablets and nude bacteria milk tablets at 4?storage effect is better,bifidobacterium brevis microcapsule milk tablets live bacteria number is more than the nude bacteria milk tablets.Therefore,Bifidobacterium brevis microcapsule milk tablets have the effect of extending the shelf life,which provides a new idea for the further development and application of Bifidobacterium brevis in the regulation of intestinal and system functions.Through the electronic nose and electronic tongue test,the microcapsule milk tablets were more similar to the milk tablets in flavor than the nude bacteria milk tablets.And microcapsule milk tablets and nude bacteria milk tablets in the taste of the commercial milk tablets in the taste of little difference,just sour and aftertaste slightly different.
