Corn has post ripening and still has certain vitality after harvest.The quality will inevitably deteriorate in the storage process,and the nutritional value and economic value of deteriorated corn will be greatly reduced.Therefore,it is particularly important to ensure the excellent quality of corn in the storage process.Some studies have shown that the quality of corn will change under the comprehensive influence of grain storage environment during storage.For example,the fatty acid value of corn will increase significantly under high temperature and high humidity storage conditions.Therefore,it is necessary to explore the impact of different storage conditions on the change of corn quality,analyze the causes of the impact,and establish a reasonable comprehensive comparison system and prediction model of corn quality,so as to provide theoretical reference for the storage work of grain enterprises and make a contribution to the national food security work.In this paper,different warehouse types are used to store the same batch of corn.By analyzing the change trend of suitable storage judgment index,quality index and health index data of corn under different storage conditions in the storage process,and using data processing software to analyze and establish the mathematical model and prediction model of comprehensive evaluation of corn quality.The main conclusions are as follows:1.Different storage conditions have an impact on the changes of storage suitability judgment indexes of corn.During storage,different storage conditions had no significant effect on the color and smell of corn;In order to maintain the best storage conditions of taste score value and fatty acid value in the lower layer of shallow round warehouse and bungalow warehouse,there is no significant change in the two indicators in the short-term storage process.After 420 days of storage,the taste score value decreases by about 3 points on average,and the fatty acid value increases by about 3.3g/100g.2.Different storage conditions have an impact on the changes of corn quality indexes.In the storage process,different storage conditions had no significant effect on the impurities of corn;In order to maintain the best storage conditions of bulk density,moisture and mildew in the middle and lower layers of shallow round warehouse and flat room warehouse,the three indexes change slowly in the storage process.The average bulk density decreases by about 3g/L,moisture decreases by about 0.5%and mildew particle rate increases by about 0.1%after 420 days of storage;Bungalow warehouse and canopy warehouse are the best storage conditions to control the proportion of imperfect corn grains,with an average increase of about 0.2%in 420 days.3.Different storage conditions had an impact on the changes of hygienic indexes of corn.In order to maintain the best storage conditions for the hygienic indexes of corn in the lower layer of shallow round warehouse and bungalow warehouse,zearalenone increased by about 7mg/kg,vomiting toxin increased by about 150mg/kg and aflatoxin B1 did not increase during 420 days of storage.4.The analysis shows that the mathematical model of comprehensive evaluation of maize quality is:Y=0.285 zx fatty acid value+0.289 zx bulk density+0.258 zx moisture+0.301 zx impurity+0.235 zx imperfect grain+0.255 zx mildew+0.280 zx taste score+0.275 zx zearalenone+0.312 zx vomiting toxin+0.236 zx aflatoxin B1.5.The prediction mathematical models of fatty acid value and bulk density of corn during storage under different storage conditions were calculated:Ft=F0+a+b t+c t2+d t3;Bt=B0+a+b t+c t2+d t3Where a,b and c are the corresponding coefficients of the formula.
