Abstract/Summary:
Objective: The fatty acid content of 8 camel milk powder produced in different batches in different seasons in Hami region,Xinjiang was analyzed qualitatively and quantitatively,and the test results were combined with the method of in vitro antioxidant experiments.Methods: The type and content of fatty acids of 8 Xinjiang Shuangfeng camel milk powder were detected by national GB5009.168-2016 method.The antioxidant capacity of camel milk powder was tested by the chemical model method.Including lipid oxidation and degradation ability by thiobarbituric acid method,free radical removal ability by superoxide anion removal method,and reduction ability by iron ion reduction method by FRAP method.Results: According to the total ion flow chromatography of fatty acid methyl ester,23 fatty acids were detected in camel milk powder in summer,and 24 fatty acids were detected in camel milk powder in winter.Fatty acid species and content of camel milk powder in winter and summer were not significantly different(P>0.05).The highest saturated fatty acid content,And then monounsaturated fatty acids,The content of polyunsaturated fatty acids was the lowest.Compared to milk powder,The total fatty acid content of milk powder is 1.9 times that of camel milk powder(P<0.001),and the content of essential fatty acid in milk is 3.0 times that of camel milk powder(P<0.001).The content of saturated fatty acid in milk powder is 2.0 times that of camel milk powder(0.001);Monounsaturated fatty acids in milk powder are 1.6 times higher than camel milk powder(P<0.001);Dairy milk powder contains 3.2 times more polyunsaturated fatty acids than camel milk powder(P<0.001),Fatty acid content of chain in milk powder is 12.4 times that of camel milk powder(P<0.001);Cattle milk powder medium chain fatty acid is 1.8 times the camel milk powder(P<0.001).Lipid oxidation inhibition rate of camel milk powder was significantly different in different seasons and concentrations(P<0.001).Iron ion reduction ability varies between seasons(P<0.05).Conclusion: Camel milk powder does not have the characteristics of many fatty acids and high content.Camel milk powder has certain antioxidant properties,antioxidant capacity is related to season and concentration.
