A Report On The Chinese-English Translation Of Jinhua Huotui(Chapter 3)

Jinhua ham,indigenous to the city of Jinhua in China’s Zhejiang province,is the logo of the city because it integrates the beauty of nature and humanity,and the curing process of Jinhua ham has already been inscribed on the national list of China’s intangible cultural heritage in 2008,all of which have shown the important role played by Jinhua ham in inheriting traditional culture and spreading the technique.The translation material is selected from Jinhua Huotui(Chapter 3)written jointly by the professionals in Jinhua ham industry.It mainly introduces the technological principles of making Jinhua ham including the curing mechanism and chromogenic mechanism.And as a scientific and technical text covering lots of terms and expertise in biology and chemistry,it is a type of text that uses clear,concise and formal language.Since the selected material covers a large number of scientific terms and principles,the translator needs to understand the content of the source text in depth.In addition,as an international publicity translation project,it requires the translation to be expressed in such a way as to maximize the effect of publicity.And given that the translation is intended for the general public in English-speaking countries,some appropriate adjustments should be made to the parts of the source text which is hard to be understood to facilitate their comprehension.Regarding the features of the source text and target readers,this report applies the framework of “Comprehension,Expression,and Adaptation” proposed by Professor Li Changshuan for analysis.Furthermore,the translator combines the criteria,principles and supporting theories about scientific and technical translation to find solutions.In comprehension,the translator understands the content by looking up information,consulting experts and reviewing the context.In expression,the translator expresses the original meaning accurately,concisely,and logically after teasing out logical relations and changing sentence structure.And in adaptation,the translator conveys the original meaning to readers effectively by adding necessary information or deleting redundant contents reasonably.Finally,it is hoped that the report can provide a reference for the translation of scientific and technical texts into English.
