The enterprise’s financial and operational management have placed working capital management at the forefront of their attention,as it is the "blood" of the enterprise and is integral to its survival and growth.This is evidenced by the fact that working capital is a component of all the supply chain links.The success of an enterprise is heavily reliant on its capacity to guarantee the efficient functioning of its working capital.As China’s economy progresses rapidly,the income of its citizens is rising,and the demand for food and drink is intensifying,thus raising the bar for the catering sector.The intensification of rivalry between catering businesses has been steadily intensifying.Since the emergence of the COVID-19 pandemic,Chinese catering businesses have been profoundly affected.The majority of catering enterprises are facing problems such as a sharp decline in customer sources,shortage of capital chain,and supply chain interruption.In the face of fierce industry competition and repeated epidemic,the working capital management level of Chinese catering enterprises is uneven,with problems such as idle or insufficient funds and single financing method.The problems of enterprises in working capital management are gradually highlighted.The current working capital performance evaluation system of catering enterprises is based on the perspective of elements.However,the perspective of elements is too single,and the projects are isolated and conflict with each other.When maintaining the level of one project,it may affect the level of another project.From the supply chain perspective,this thesis seeks to address the deficiencies of the current evaluation system,and by taking into account the characteristics of working capital management of catering enterprises,it selects various indicators from the three supply,production and marketing channels,thus establishing a performance evaluation system for working capital management of catering enterprises from the supply chain viewpoint.Select Ajisen(China)as the case enterprise,16 catering companies for comparison,employ entropy method as performance evaluation to weight the indicators of each channel,ascertain the effect of the indicators of each dimension on working capital management,and analyze the issues in the case enterprise’s working capital management simultaneously.After this study,it is found that Ajisen(China)has problems of high dependence on suppliers and backward procurement mode in the procurement process,slow collection of other receivables in the production process,and lax control of food quality and safety,as well as problems of too scattered customers and low income of catering products in the sales process.Proposals for reasonable optimization of the issues presented are presented in order to introduce fresh concepts for augmenting Ajisen’s(China)working capital management,as well as to furnish reference techniques for augmenting the working capital management effectiveness of Chinese catering businesses.
