Arachidonic acid is an important n-6series PUFAS. Arachidonic acid and its metabolic derivatives have strong biological activity to promote the development of human brain and retina, increase the elasticity of blood vessels, prevent cardiovascular diseases, inhibit tumor, prevent cancer, Cosmetology and slim, Immunomodulatory, treat diabetes, Anti-inflammatory and so on. Arachidonic acid has many applications in different fields, In the food industry, Also add Arachidonic acid to infant formula food as a nutritional supplement, or add to the food of special crowd. Arachidonic acid was also applied in the cosmetics, pharmaceutical industry, and poultry industry.Microcapsule technology means that entrapped the solid, liquid, or gas in the small and sealed capsule with polymer materials, and control the release rate only under the specific conditions. Taking the drug prepared into microcapsules, this method can improve the stability, cover up the bad smell, reduce stimulating, solidified the liquid drugs, avoid reaction between the drugs, and make the drugs released and get drugs has targeting. Spray drying is the most common methods of microencapsulation, relying on the costs low, has good embedding effect and high Stability.Arachidonic acid readily oxidized by the light, the air, metal ions and other factors, and produce metabolites which is harm to human body. In this paper, we entrapped Arachidonic acid oil by microencapsulation method, delaying the oxidation of Arachidonic acid oil, increases its stability. The experiment optimized and researched the emulsion formulations which to microencapsulate, and the process of spray drying.1Through the screening experiments, determine the wall materia which to embedding AA oil is a wall materia Combination, include Sodium caseinate、Whey protein and Maltodextrin.2Get the optimized emulsion formulations through Response surface experimental design: determine embedding rate as the index, and the examine factors are Maltodextrin representing the proportion in wall material, the weight ratio for Sodium caseinate and Whey protein, and Oil content. According to the Centers Box-Benhnken combination of experimental design principles, Using response surface methodology with three factors and three levels. The optimized formula is:Maltodextrin in the wall material is52.69%, Sodium caseinate:Whey protein=3.25:l, Oil content36.81%.3Get the optimized process of spray drying through orthogonal experiment:the inlet temperature is180℃, the temperature of transport emulsion is70℃, the homogenization pressure is50MPa, homogenized three times.4The physical and chemical properties of arachidonic acid microcapsules and its stability test:Surface oil of arachidonic acid microcapsules is0.39%, Moisture content of arachidonic acid microcapsules is0.31%, Peroxide value of arachidonic acid microcapsules is0.014g/100g, The arachidonic acid microcapsules is Qualified to achieved the requirements of physical and chemical indicators, is the qualified products. From the Stability test we know that Oxidation Stability of the arachidonic acid microcapsules is good.
