With the rapid development of the society and the enhance of people's health consciousness, food safety is attracting more and more public attention. It is necessary and urgent for the customers and the government regulators to establish a system of food safety supervision, which will make the process of food producing, processing and circulating to be supervised and traced so that the customers can purchase food with no anxiousness. At present, many developed countries have established their own food safety traceability systems and considered it as an effective means to administrate food safety. According to the situation of our country's food production, processing and marketing, this thesis, taking the tracing of pork safety for example, analyzes the key factors that effect pork quality safety during the process of live pig raising, slaughtering, processing and marketing. It also has researched the using situation of individual identification of pork production industries and developed a traceability system in the pork safety production chain so as to improve the quality management in the process of animal products supply, promote the production and sales of safe food and the construction of corporation's brand while improve corporations'competitive power in markets. The main contents and research results of the thesis are as follows:(1) The choice of the individual identification technologyThe technique of individual identification is the basis of applying meat traceability system. Through the analysis and research of automatic identification technique, the types of individual identification equipment in the meat production chain can be fixed.Thus, information docking and mark transformation from live pig raising, slaughtering to marketing can be realized.(2)Design coding scheme of traceability systemUnified cording system is the basis of implementing product tracing. The thesis indentifies food individuality according to EAN·UCC request. Besides this, it combines EAN·UCC with RFID(Radio Frequency Identification) and creates live pig RFID codes and meat product codes so as to establish a basic information platform in compliance with international rules to satisfy international information shareware.(3)Key factors in pork product tracingAccording to the actual situation and international criterion to pork traceability system, the author, taking the analysis of large-scale raising farms, abattoirs and meat product markets for instance, elaborates the key factors that effect pork quality safety in order to supply data basis for meat information tracing system.(4)Design of the frame of meat product quality traceability systemAccording to the characters of food supply chain, the author, taking the live pig product for instance, designs the overall structure and every subsystem of meat product traceability system from managed objects and functions. And on the basis, the author picks up the system's component model in Object-Oriented Analysis and software reuse. Besides this, the author designs the network framework of meat product traceability system combining information level of every participated unit with application requirements in supply chain.(5)Implementation of the system on software and hardwareThrough the analysis of the application of the raising industries'original electronic ear tag, the author puts forward to a method to improve the application of electronic ear tag and designs a new type of RFID ear tag which is suitable to live pig. The author also designs parts of the system's components and researches the system's data access layer. Finally, the author takes a meat product traceability system established by slaughter industries for example to show its detail research process. The study of the system also supplies a reference for other similar products'food safety tracing, which will effectively help trace and early warn the information in the whole process of product circulating so as to improve the quality management in food supply.
