Food safety problem has become the focus of social concern.It will not only change the risk preference of consumers but also bring to the great challenge for the risk control of enterprises.Obviously,it requires that food enterprises research the risk preference of consumers,at the same time,it looks for the flaws of the enterprise itself of risk control and explores a new theory to strengthen food safety control.In this context,the research,based on risk preference theory of consumers and the food safety risk control theory of the enterprises,carries on the risk assessment for the harm of Listeria monocytogenes in pork and the harm of Golden Staphylococcus aureus in the frozen dumplings of He Nan province,tried to get the risk score of Listeria monocytogenes in pork and Golden Staphylococcus in frozen dump, applying Risk-Ranger model as a risk assessment tool.The research,applying the risk appetite theory of consumers,the risk control theory of enterprises as the starting point,puts forward the relevant propositions and takes a mathematical proof of the propositions,then interprets the case.The results show that the risk preference degree of consumers and their consumption frequency variable,the ratio of consumer groups variable are positively correlated.Risk control effectiveness and the severity of the hazard variable,probability of product contamination variable,again probability of product contamination variable are negatively correlated.Risk control effectiveness and the enterprises understand level of susceptible population risk bearing capacity variable,effect of process variable,effectiveness of the post-p rocessing control system effectiveness variable,effect of preparation for meal are positively correlated.On this basis,the research proposes the nine variables into the food safety risk assessment model,the size of population of the interest and the level of initial infection increasing several tim- es can cause consumer poisoned that constitute all the variables of the food safety risk assessment,in order to study the experience of He Nan province applying Risk-Ranger model as analysis tool.The research comes to the following conclusions:the risk ranking of Listeria monocytogenes in pork of He Nan province in 2013 is 51.It belongs to the high risk.The probability of illness per consumer per day is 1.65× 10-6.We predict that the number of illness of interest population per year is 1.16×103.The risk ranking of Golden Staphylococcus in the frozen dumplings of He Nan province in 2013 is 65. It belongs to the high risk. The probability of illness per consumer per day is 6.25×10-5. We predict that the number of illness of interest population per year is 4.45×105.Finally the research puts forward relevant proposals from the perspective of the risk management,so as to strengthen the food safety risk control ability of the enterprises. |
