China has large production and consumption of peanut which is one of the most oil-producing plants in domestic.The annual production of peanut oilis second only to rapeseed oil.Today,China's economy has been completely transformed,people's income level and quality of life have been greatly improved.The quality and safety of peanut and its finished products are receiving increasing emphasis.People begin to question the existence of harm of peanut products on the human body,because process of peanut product is very complicated,the main production are not strong enough,peanut growing environment is deteriorating,and their security incidents has been repeatedly reported in the newspapers.Mycotoxins are the main factors which influence the quality and safety of peanut.Peanuts are susceptible to contamination mycotoxins during the field and storage period.There are aflatoxins,citrinin and other types of mycotoxins in peanuts.Aflatoxins are the main toxic substance which causes deterioration of peanut products.These toxins have toxic to humans and animals which can cause serious injury.Risk ranking is a technical method by which hazard factors in agricultural food that is harmful to human and the environment are confirmed and sorted to find the most important risk.The first step of risk assessment is identifying risks prioritization by this method.Identifying risks Prioritization is the main way to reduce the harm of mycotoxin contamination to peanut products.On the basis of others' previous studies,we identified mycotoxinrisk factors' harmful levels,established mycotoxin risk factor evaluation according peanut mycotoxin test data and limit and a standard method tofind,identify and sort mycotoxin hazards risk factors in peanut with the help of expectations risk ranking method to calculatemycotoxins risk factor ranking.The main contents and results are as follows:1.Based on scholars'risk Rankingresearch results,mycotoxins risk factors' harmful levels was identified,a standardized method was established find,identify and sort mycotoxin hazards risk factors in peanut according 604 peanut samples tested statistical results and peanut mycotoxin test data and limits.Simultaneously,examples were given of mycotoxinhazard risk factors risk ranking.Provide a reference for peanut quality and safety risk monitoring and risk assessment.All this provides a reference for peanut quality and safety risk monitoring and risk assessment.2.Risk ranking of peanut mycotoxin adopt the expected risk evaluation and risk ranking formula.By calculating the mycotoxin risk index for each factor,this evaluation methods could overcome the uncertainties and subjective factors shortcomings on the results of the assessment of risk factors mycotoxins,so the analysis will be more objective and accurate.3.In this paper,we adopt risk expectation approach and criterion method to risk ranking for mycotoxins in peanut products.After six indicators were quantitative identification according to food security risk factors,we calculate risk scores,and finally through quantitative identification of risk factors to determine each risk factor mean and ranking results.Quantitative risk assessment of pathogenic bacteriawere used with above analysis,we rank mycotoxins in peanut as follows:AFB1 must be paied most attention;AFG1 was major concerned index;AFB2,AFG2 index in general attention,ochratoxin,deoxynivalenol is without attention index.
