Study On The Framework Of Food Supply Chain Quality Safety

Since the opening and reform policy, China has displayed increasing economic and technological development. Nevertheless, food safety remains a severe social and governmental concern and waits to be addressed. From the beginning of 1990 s, supply chain management has become a wide-spread concept in the sphere of theory as well as practice. Its major utilization is witnessed in manufacturing segment rather than food industry. Therefore,with the combination of supply chain and food industry, this dissertation proposes a whole set of concepts concerning how to ensure food safety.Firstly, on the basis of analyzing food safety and supply chain theory, it puts forward the definition of food supply chain and probes into the fundamental theory of pre-warning、hazard analysis and critical control point、cold chain、food supplier selection and traceability. After the analysis of the managerial experience from advanced countries, it goes further to suggest how to improve the food safety condition in China.Secondly, through identifying the factors involved in affecting food safety, it puts forward the index system for food safety pre-warning and pre-warning model. With the example of U province, the model has got its practical utilization demonstration. The food safety pre-warning system definition and function have been through scrutiny as well. It points out the overall framework and operating process of food safety pre-warning system and the corresponding suggestion for pre-warning system in our country.Thirdly, starting from the theory of supply chain core enterprise, it conducts research in terms of countermeasures to control food safety from the perspective of manufacturing 、logistics as well as marketing company respectively. In the case of manufacturing enterprise,it argues that HACCP should be adopted to ensure food safey; For logistics enterprise as the core of supply chain, cold chain serves as the key to food safety; With marketing company as the core of supply chain, it constructs the model of supplier evaluation and selection.Lastly, with the thorough analysis of the definition of traceability, the dissertation proposes the function of food supply chain traceability and its major participants, designs the overall framework of traceability system. With the apple supply chain as an example, it showcases the utilization of traceability system.
