Pork is the main meat product of the residents in our country,and it has an important position in people's daily life.Pig slaughtering is the key link to ensure the quality and safety of meat products in the pig industry chain.The establishment of quality and safety traceability system for pig slaughtering is an important measure to effectively cope with the complex environment of pork industry chain and interest relationship in China,and is of great significance for promoting China's food safety management more perfect.At present,many areas of China especially the small and medium-sized city pig slaughter quality safety management ability is insufficient,the traceability system construction level is not high,the scope of application is limited,so as to promote food safety management of pig in China,improve the system construction and improve the level of influence.Therefore,in order to ensure food safety as the main purpose and improve the process monitoring of pig slaughtering as the key points,this paper studies the construction and improvement of Zhuanghe pig slaughtering quality and safety traceability system.In the specific research,this paper summarizes the domestic and foreign research on the related concepts of traceability system for quality and safety from the quality and safety of the general theory on the quality and safety of the traceability system,highlighting the specific research on food quality and safety traceability system,from the frame construction,main body aspects of interpretation of the traceability system structure and operation mechanism.On this basis,taking the current situation and existing problems of pig slaughtering safety management in Zhuanghe as the breakthrough point,the whole process of pig slaughtering process and traceability information management is expounded.Clear comprehensive quality and safety management of pig slaughtering in Zhuanghe City,put forward the main problems of quality and safety management of pig slaughtering in Zhuanghe city and from illegal body punishment is low,quality and safety consciousness,responsibility system is not perfect,the quality and safety system,quality and safety traceability process,slaughtering industry related cognition three aspects analyzes the causes of quality problems of safety management.According to these problems and reasons,in order to improve the quality and safety traceability system in the legal level,the integration of quality and safety traceability system,improve the technical basis of pig products market standardization development level,improve the quality and safety traceability and intervention consciousness and other aspects and puts forward some countermeasures and suggestions to improve the overall quality,improve the safety of pig slaughtering in Zhuanghe city the traceability system,and as a means of information management and improve management efficiency and promote the effective to food quality supervision and management level of our country.
