Pork is the main consumer goods, accounted for a significant proportion of consummating structure in daily life. Pork's quality and safety conditions related to the people's health and basic quality and safety of the people, but also about the stability of food markets and competitive position in international trade. It can provide references to the development direction of Chinese pork quality and safety, as well as for the government supervision that researching the issue with a deep, systematic method based on the supply chain. Studying in the thesis involving all aspects stakeholders of the pork supply chain of production and business: feed, veterinary drugs producers, operators, the main body of raising pigs, pig slaughter and processing, the transport of living pigs and pork, sellers at wholesale and retailing market, they jointly decided to pork quality and safety level.The author elaborated the factors of pork quality and safety, the total situation and current supervision system about it. Then, the problems of pork quality and safety on the supply chain were generalized on every step of pork production, transportation and sales based on the induction.Consumer's demands to the pork quality and safety were analyzed firstly in the main body of the paper. Consumers in Beijing city can delegate the pork consumption situation of big city consumers, the author analyzed consumers cognition, action of purchase and willing to pay through a questionnaire about Beijing consumers pork consumption. In the research the conclusions were draw that among three certificate pork, consumers have the highest cognition to PFF, organic pork is a higher one, but the cognition to the green pork was low, consumer's cognition won't change with the consumers'education and income, but change with the gender and the age, consumers who are female or elder have a high cognition. Income was a significant variable both in analysis of variety choosing and in analysis of consumers'willingness to pay (WTP). Pork variety choosing of the consumer is relating to the purchase position, satisfied to the information of pork quality and safety. Meanwhile, consumers'WTP were influenced by household income, satisfaction with present quality information and pork consumption volume of future.In this paper, the author put forward the dividing way creatively such as Loose Pork Supply Chain, Intermediate Pork Supply Chain and Compact Pork Supply Chain in the view of systematic theory. In the process of analysis, empirical analysis was used in the Loose Pork Supply Chain, and theoretical analysis was used in the Compact Pork Supply Chain, besides, both empirical and theoretical analyses were used in the Intermediate Pork Supply Chain researching. The analysis comes to main conclusions including: there was a broken link between the material stages and raising stage, an unclear duty in mode on behalf of the slaughter, the market orders were in chaos, the practitioner has a low safety concept, so loose Pork Supply Chain has a low centralizing quality control power. In opposite to the loose Pork Supply Chain, the Compact Pork Supply Chain means that raising pig, slaughter, processing and sale were incorporated in a large enterprise, which can be concluded that the centralizing quality control power was the highest, and the company provides the top grade pork to the consumer followed the Premium strategy. The enterprises might provide low quality pork because of quality information asymmetry.The Intermediate Pork Supply Chain widely exists. The paper compared the organization,information, equipment, certification and structure of human resource. Theory of game was used twice in supply & requisitioning parties and pig suppliers, slaughters, & pork sellers. The conclusions were focused on Pork Supply Chain source control; enhanced sanctions when detecting the pork quality incident; to implement quality information traceability system.Besides, the paper analyzed the pork Market Access Institution after the analysis on Pork Supply Chain. Asking for tickets, establishing basic market access standard and designating source of pork are the common Market Access Institutions in nowadays, implement anyone of them will lead to the distortion of social welfare. In the process of implementing a policy, producer's ability, practicability and border between market and government must be taken into account to avoid Rent-seeking phenomenon.
