Study On The Coordinated Quality Control Mechanism Between The Farms And Slaughterhouses In Chicken Supply Chain

As a tradition,chicken products are favored by Chinese because of its tender taste and rich nutrition.The demands for chicken products have substantially increased in the past two decades in China.However,the quality and safety of chicken products in China is particularly prominent,which has brought huge threats and potential damages to the health of the consumers,and it also seriously restricts the development of Chinese broiler husbandry and the promotion of its international competitiveness.The production process is composed of different links,which involves breeding,slaughtering,and selling,and each link plays a very important role for the key quality characteristic of chicken products.However,in the traditional production patterns,the relationship between the partners in the breeding and slaughtering links of chicken products is not close enough,and the information between each is asymmetrically restored,which leads to low quality prevention levels in upstream enterprises;and the inadequacy of the quality trace-ability system with some other reasons contributes to the low levels of quality test in downstream enterprises.The quality control mechanisms in the supply chain are not effectively established.The quality behaviors of breeding and slaughtering parts greatly influence the quality of the products,and the establishment of benefits and risk sharing mechanisms and between them is a critical step to guarantee the safety of chicken products.Combining the related literature of domestic and abroad,interviewing the broiler farms and slaughterhouses in many provinces,comprehensively using system analysis,statistical analysis,econometric analysis,entropy change model analysis,differential game analysis and system simulation method,combined with the previous research results of the Livestock Products Supply Chain Quality Control Group,this paper systematically study the process of the quality formation and quality control,the factors influencing the quality control,especially make a thorough research on the quality coordinating control mechanism and strategies.Firstly,the concepts and theories of chicken supply chain,chicken quality and the forming process,the quality control process of supply chain,and the goals and strategies of quality control were defined and expounded step by step.The research shows that the purposeof supply chain is to coordinate the quality control behaviors and quality control results of the farms and slaughterhouses,which is a multi-factor influencing and dynamic evolution process.Based on the survey data of 836 copies of questionnaires from 9 provinces,the cognition and behavior of quality control standards,the cooperative quality control cognition and cooperative quality control behavior of the broiler farms and slaughterhouses are studied and statistically analyzed.The results show that the levels of cognitions to the importance of quality standards of the farms and slaughterhouses are quite the same.But there are great differences in the understanding and the adoptions of the quality standards.The behaviors of slaughterhouses are generally superior to those of the broiler farms,which means the coordinated quality control is far from being reached.Using structural equation model,it analyzes the influencing factors of cooperative quality control on broiler farms,and shows that the cognitions of cooperative quality control of broiler farms are significantly positively affected by the management characteristics,environmental characteristics,the managers' characteristics,and the cognition characteristics of the broiler farms;and the levels of cooperative quality control behaviors of the broiler farms are significantly positively affected by cooperative cognitive,management characteristics and the environmental characteristics of the farms.Then the article deeply analyzes and expounds the coordinating quality control mechanisms between broiler farms and slaughterhouses,which are composed of motivated mechanism,transmission mechanism,promotion mechanism and guarantee mechanism.The realization mechanism of cooperative control is explained by dissipative structure model,and the conclusions are drawn: Increasing the negative entropy flow and reducing the positive entropy flow are the fundamental ways to improve the coordination level of the two links' quality behavior and realize the quality coordination control effect.The data of field investigation on the two links are used to verify the theoretical analysis.Based on the previous researches of the quality control of supply chain,using the differential game method,this paper systematically analyzes the quality coordination control mechanism of the supply chain which is composed of a single broiler farm and a single slaughterhouse.The optimal quality control behaviors of broiler farm and slaughterhouse arerespectively investigated under the conditions of Nash non-cooperative game,Stackelberg leader-follower game and cooperative game between the two actors.The results show that the optimal quality control behaviors occur only under the cooperative decision-making mode,so does the overall profit of the chicken supply chain.It calculates,and also proves,the ranges of distribution coefficients of supply chain's profit between the two actors,with which both sides can reach Pareto optimum.Finally,the conclusions obtained by differential game are verified by example and System Simulation.Based on the research above,the paper gives the countermeasures and suggestions to promote the cooperative quality control levels between broiler farms and slaughterhouses: the farms should strengthen communications with slaughterhouse,make more details of regulations and rules,try to expand the scales;and the runners should learn more specific knowledge and improve their insights into the trends of the broiler industrey.The slaughterhouses should increase investments in the construction of information system,build quality trace-ability system,and establish reasonable benefit distribution and punishment mechanisms.The government should offer more industry support and service policies,improve the legal systems and of animal product quality,as well as the supervision systems,and provide more infrastructure investments for the construction of quality trace-ability system.The assotioations should make more detailed product srandards,autonomously supervise the quality behaviors of the enterprises,and expose more quality imformation to the consumers.Consumers should cultivate healthy and sophiscated consuming consciousness and raise awareness of rights protection and social activity participation.
