Capsaicin which is a food additive with hot taste is widely applied to food seasoning and to some industries, such as medication, agriculture and so on. At present, semi-products of capsaicin extacted from hot pepper with a great deal of organic solvent in multiple, contain very low capsaicin and bad purity, which be unable to meet the demands of home and abroad markets, meanwhile, results in low economic efficiency. Therefore, To get semi-products of capsaicin with higher content and purity, the extraction method properly used was studied firstly. Though researching two methods-traditional Solvent Extraction (SE) and modern Supercritical Fluid Extraction (SFE), in which various technological parameters were excellently designed. Based on the results, the merits and shortcomings existing in two methods could be known. Combined their merits, we explored the best technological extracting process of capsaicin, it is as follows:1. Considering extraction effects and economic cost, investigation indicated that ethanol can be as the best extracting solvent. The optimum parameters separately are that raw material size 80mm2,temperature 75℃, ratio of raw material to solvent 1:5(w/v), time 1hr, extracting numbers 4~6 times, extracting rate of capsaicin (87+1)%, extracting content of capsaicin 0.876%, Scoville 131400.2.As a modern separate technology, SFE has widely applied perspective in food Industry. CO2 as a solvent was used in the paper. The optimum parameters separately are that raw material size 40mm2, pressure 10MPa, temperature 45℃, entrainer 5% water, time 1hr, extracting numbers 2~4 times. extracting rate of capsaicin (93+1)%, extracting content of capsaicin 0.934%, Scoville 140100.3.The excellent technological process of capsaicin is as follows:Dried red pepper dry to moisture content 4% grind to 80mm2 put in 75% ethanol and heating extraction temperature 75℃,ratio of raw material to solvent 1:5(w/v), time 1hr, extracting numbers 4~6 times filtering concentrating extract many times by petroleum ether capsaicin solution send into high pressure container pressure 10MPa, temperature 450C, entrainer 5% water, time 1hr, extracting numbers 2~4 times capsaicin purity concentrating purify and crystallize capcaicin crystal4. By the antimicrobial experiment, We concluded that Capsaicin can effectively inhibit some main bacterium and epiphytes .
