Concentration has been focused on extraventricular air pollution instead of indoor air pollution for a long time. A good many factors, such as fuel-combustion, cooking, human activities, the application of ineligible timbering and ornamental materials, airproof construct of buildings, lead to the more polluted environment indoors than outsides, consequently do harm to humans' health , and even result in several kinds of disease, as a matter of fact, with the fast development of modernization and urbanization and the rising advance of people's living standard, the circumstance of dwelling places and the air quality of public buildings are becoming the public focus.In this paper, investigation is proceeding with the harmful influence on human and environment of indoor airborne particle pollutants especially the cooking oil fume pollutants in kitchen, and on the basis of current achievements including overseas and domestic research on this project, making an analysis on aerosol sources, types, characteristics, distribution and the law of movement. According to its law of movement, a survey is proceeding on the current avenue of discharge of the cooking oil fume pollution, which contains central exhaust system, separate exhaust system and synthesis system, then giving an analysis to the virtues and shortcomings of these systems.To describe the movement situation of the cooking oil fume pollutants in a direct and visual way when discharged, this paper, applying the finite differential method, use Visual Basic to compile the language so as to calculate out the individual value of the corresponding stream-function equation in kitchen exhaust hood, meanwhile, software for graph (Ansys) is employed to draw the flow-field chart describing the movement of the polluted air.In addition, by contrast to the exhaust hood for industrial ventilation, this paper analyze the characteristic of two-dimension puff and suck airflow and the flow-field simulation of numerical value, compare the constant-speed line chart, and indicate the available two-dimension airflow in kitchen ventilation.At last, this paper introduces current approaches to the disposal of cooking oil fume, make a comparison between desiccated-method and hydro-method, then analyze the respective advantages and disadvantages according to the different equipments, and summarize the above-mentioned part with a discharging and purifying appliance suitable to the local conditions.
