Alcohol wastewater is a high-concentration organic wastewater with many components, but most of them can be reutilized. The pigment from molasses alcohol wastewater is a natural pigment that roots in molasses. It is a mixture with many components that is formed and accumulated in the sugar processing. It includes caramel pigment, maillard pigment and phenolic pigment. It is reported that maillard pigment and phenolic pigment both have the antioxidant activity. The synthetical antioxidants have the potential threaten to the health of people, so it is of great realistic significance to extract natural antioxidant from alcohol wastewater. We expect to find a more secure, more efficient, more inexpensive natural antioxidant. The main research contents and results of this thesis are reported as following:1. The extracting result of CH3OH on powdery pigment was studied at first. By the single factor and orthogonal experiment we got the best extracting condition of CH30H on powdery pigment :temperature 45℃, pH 7, time 90min .2. The macroporous resin HPD-600and D301-R with better effect was selected by the adsorptive experiment of five macroporous resin HPD-600,HPD-500,D301-R,NKA-II,D296-R on the pigment concentraction.By the single factor and orthogonal experiment we got the best adsorptive condition of macroporous resin : pH 7, temperature 45℃, time 90min . Its adsorptive rate is more than 80% in this condition.3. The stability of sample A and B was studied by pH , temperature, citric acid, sodium benzoate, metal ion, H2O2, NaNO2 and dispersion light. The result shows the effect of pH , H2O2, and NaNO2 is higher than that of temperature, citric acid, sodium benzoate, metal ion on the stability of pigment.4. The antioxidant activity of pigment of alcohol wastewater was studied by five different system (oil, 0H, N02-, 02- and DPPH) . The result shows that the two sample both have certain the antioxidant activity and their antioxidant activity enhances with the adding of concentraction, but their antioxidant effect is lower than TBHQ and Vc with the same concentration. The antioxidant activity of pigment sample A and B with 0. 04% concentration is lower than TBHQ 0. 02% concentration. Their IC50 is higher than Vc in the 0H, N02-, 02- and DPPH system.5. The pigments contain phenolic pigment and flavonoid pigment through qualitative, quantitative and infrared spectrum analysis. The content of flavonoid pigment and phenolic pigment in the sample B(11.561,146. 644mg/g) is higher in the sample A(5. 577,70. 224mg/g). Thin-layer chromatography experiment shows that the pigment contains five substances at least.6. The effect of antioxidant of pigments from alcohol wastewater may be the act of maillard pigment and phenolic pigment together.
