The technologies of extraction and separation of polysaccharide from Zizyphus jujube with multiple acid protease and multiple neutral protease were studied systematically. Based on these study two mature extraction processes of polysaccharide were put forward and the product is analyzed with ultraviolet absorption spectra and infrared spectra.Some details related to the whole process were also be discussed.Firstly,among several different extraction methods for polysaccharide from Zizyphus jujube,the multiple acid protease treatment method was selected finally for its excellent effect.Accordingly, mensurating the enzymes' activities was carried out.Secondly,studying about the multiple acid protease treatmen for polysaccharide from Zizyphus jujube was concretely continued.As for the details,the effect of every main factors on extraction ratio were discussing, the optimum condition of extraction effective components from zizyphus jujuba was determined with the orthogonal test. The multiple neutral protease treatment method also was applied to obtain polysaccharide from Zizyphus jujube.These two process compared with tradition technology was shorter,lower cost and also could get higher extraction ratio and polysaccharide content.Finally, measuring and developing were carried out for improving the character of Zizyphus jujube pomace. In the following study,the optimal process condition for decoloring Zizyphus Jujuba pomace Dietary Fiber was ascertained.The ultimate pharmacology experiment about Zizyphus Jujuba polysaccharide show the innocuity and the great treatment to S180 entity tumour mouse.
