| In the global heated discussion, how to check the nutrition enhancer and safety of supplementary food has become a crucial problem. At present, there are still many difficulties in analyzing food. Using high-performance liquid chromatography / electrospray mass spectrometry (HPLC/ESI-MS) has advantages of sensitivity, exclusiveness, reliability and simple disposal of samples. This experiment provides reliable qualitative analysis and highly sensitive quantitative analysis for the nutrition enhancer and safety of supplementary food. The studying results are introduced in this thesis as follows:1. The recent progress of nutrition enhancer and safety of supplementary food has been summarized. The problems they met were also summarized. The improvement in HPLC/ESI-MS technique and the application of this technique were discussed.2. A method for measurement of amino acids, the basic unit of large biological macromolecule, by HPLC and orthophaladetyde (OPA) pre-column derivation was described. External standardization method was used for determining quantity of 15 amino acids. The method was also applied for analyzing free amino acids composition of pearl powder.3. Vitamins are necessary substances in the organism with normal metabolism. In this paper, a HPLC/ESI-MS method for simultaneousdetermination of taurine and ten water soluble vitamins was developed and validated in multivitamin tablets, which can also be applied in clinical detection and food research.4. A sensitive and specific method for simultaneous determination of sibutramine and its metabolite, iV-di-desmethylsibutramine, the illegal food additive in weight-loss healthy food, was improved, based on HPLC/ESI-MS. The method has good sensitivity, accuracy, precision and specificity. And it is suitable for simultaneous determination of sibutramine and its metabolite in weight-loss healthy food.
