Food safety is one of the most important threats facing the public at present.At the same time,economic development promotes changes in people's dietary concepts,and has higher requirements for food quality including safety,senses and nutrition,from simply pursuing food quantity and The taste is enhanced to the safety,health and flavor of the food.However,college students with greater nutritional needs have strong freedom and randomness in diet choices,often paying more attention to the price,taste and weight of food,while ignoring their safety and nutrition.Although the safety construction of college canteens has achieved certain achievements,there are still some problems of food safety hazards and nutritional imbalances in some aspects.Food canteen staff and students lack awareness and knowledge of food safety and nutrition,and food safety incidents such as collective food poisoning still occur every year.Due to the consideration of operating costs and improper handling and cooking of ingredients,some canteens not only have potential safety hazards,but also cause great damage to food nutrition,which is not conducive to the health of college students.Based on the above research status,this paper uses the three theories of food safety and quality assurance system,goal management theory and nutrition reference standard and basic theory,taking X University in North China as an example to understand X University canteen and student diet through various investigations.Situation;through descriptive analysis and decision tree analysis of data,students are found to have problems in nutritional knowledge,attitudes and behaviors,and there is a positive correlation between dietary nutrition and physical health.The study found that the X University canteen has food safety hazards in the procurement of raw materials,personnel,equipment,layout,environment and garbage disposal.There is improper cooking in the dining room,unreasonable food mix,excessive oil and salt,and no food nutrition value.High;student meals have unbalanced distribution of three meals,high intake of staple foods,severely inadequate intake of vegetables,biased protein products and polarization,excessive fat intake,and unscientific food choices.To solve these problems from establish food safety management system and nutrition management model,reform the canteen management system,make full use of the technology and auxiliary tools,attaches great importance to the education and training,and strengthen the economic incentives and compensation five aspects put forward the corresponding countermeasures,to improve the college canteen food safety and nutrition management system.
