Momordica charantia L. is commonly cultivated in tropic, semi-tropic and varia ble zone. The fruits, leaves and roots of Momordica charantia L. had been res earched and the results showed that they have the biological activities includin g lowering high blood sugar, anti-HIV, anti-oxidation, antibiosis, and anti-tumo r, and also could be used to resist gastrointestinal problems, childhood viral di seases, skin problems, gynecological aid and fevers in traditional Chinese medi cine. Recently, there has been intense interest in chemical components and nutr itional value of Momordica charantia L. Momordica saponins with biological a ctivity in fruit is the admixture of β-sitosterol-β-glucoside and 5, 25-stigmastadi en-3-glucoside. Flavone is another bioactive component and can be worth utilizi ng. Momordica charantia L. with high economic value that was very easy to o btain was regarded as the raw material of functional food. So the profound res earch on chemical components in Momordica charantia L. has a theoretical an d applied value.In this paper, extraction technologies and anti-oxidant effect of momordica saponins and Flavones in Momordica charantia L. were studied. Especially, SFE-CO2 was used as a kind of extractive way, which can reduce breakage of active components and eliminate impurity. Besides, the analytical method and anti-oxidation of momordica saponins and flavones were studied. Based on these, two kinds of healthy foods-granules and tablet with different materials were developed, which could provide theoretical and applied foundations for the exploitation of functional foods on Momordica charantia L.. The main studies and results in the paper are mentioned as the following:1. Optimal conditions of the extraction of the total momordica saponins fr om Momordica charantia L. with reflux was studied by using orthogonal desig n. The results showed that extracting temperature and extracting time had rema rkable effect on extraction rate.
