This dissertation was studied on Agaricus bisporus soluble Polysaccharides and Polyphenols, which extracted and isolated from Agaricus bisporus. The deodorization ctivities of the polysaccharide and polyphenol in vitro was studied. The result as following:1. Soluble polysaccharides of Agaricus bisporus were extracted by hot water. The optimal conditions were: the temperature 100℃, extraction time 4 hours, adding 5 times of water, The yield was 3.18%.2.The polysaccharide was separated with DEAE-sephadex A-50(Cl-) after extracted by ethanol, doffed protein and doffed pigment, while used 1mol.L-1 NaCl washing under 0.5mL.min-1 velocity of flow. The resoult showed that two peaks could be obtained: Peak1,Peak2. Peak2 was separated with Sephadex G-100, while used non-hydronium water washing under 0.5mL.min-1 velocity of flow, got a pure sample with an single normal peak, and measured it's molecular weight was about 97544.3.Agaricus bisporus were extracted by 70 % acetone n-butanol,chromatographyed by HP-20. Polyphenol purity was 63.69%, which washed by 70% ethanol.4.The MIC of the polysaccharide whose purity was 78.3% and the polyphenol whose purity was 64.1% to P.gingivalis,P.intermedia,F.necleatum were 60,30,20 mg.ml-1 and 2.5,3.5,2 mg.ml-1, but the antibacterial actionis were not as good as patent medicine.5.The eliminating action of polysaccharide and polyphenol to chicken liver corruption was inconspicuous in 12h, and enhanced remarkably after 24h; In the same concentration, the elimination effect of polyphenol was stronger than the polysaccharide; The elimination effect enhanced with the concentration increasing and depressed with the temperature rising.6.The polysaccharide could adsorbs NH3, TMA and indole, when the concentration increased, the velocity of removing odor expedited, whereas the increasing of thermal was adverse to adsorption; the polyphenol possessed elimination to NH3, TMA and indole, even the action of removing odor was the -OH in the polyphenol occurring chemical reaction with the smelt substance.
