The harmless natural edible pigment was conspicuous topic in the phyto-chemistry and the food scientific research, Anti-aging biology and free radical biology were two hot topics of modern life science in the recent years. The anthocyanidin and anthocyanin are important natural organic compound, besides taking the edible pigment, it also has the vital significance to treatments and the prevention disease, such as tumor, senile, cardiovascular of humanity. The research and development of new antioxidant functional food and the natural antioxidant can meet the increasing demands of human for health and longevity.This experiment has researched extraction method, the purification and the component of the grape skin pigment, and has mensurated the content of its part of nutrition and active ingredient, Through two kinds of antioxidants system synthetic evaluated antioxidants activities of grape skin pigment, the main result has been as follows:1. In order to research the pigment extraction effect, adopted the traditional solvent to soak the formulation and the ultrasonic wave extraction process, has compared extraction efficiency, and optimized the factor by orthogonal design. And analysis the result by using variance analysis, the result indicated that traditional solvent optimal technology was the heating 40℃, the treatment time 60minutes and 70% of ethanol, and the ultrasonic treatments optimal technology was the power 80w, the treatment time 30minutes and 70% of ethanol, and the effect of ultrasonic treatments on extraction of grape skin pigments was higher than traditional solvent treatments, saved the solvent, reduced the extraction time, obviously has saved the resources and the energy.2. Through the paper chromatographic, the column chromatographic, chemistry and the cation exchange resin, further it has separated and purified. By the several purification inspections indicated that the silica gel was the best way. To utilize the ultraviolet spectrophotometric to examine purification pigment, the band tallies accorded with the characteristic band, and the impurity obviously reduced.3. In order to discuss the grape skin pigment antioxidant activities, and adopted the linoleic acid antioxidants system and the free radical DPPH elimination ability. The result indicated that the free radical DPPH elimination rate of grape skin pigment was 85.31 percents, also approached 97.15 percents of VC. The grape skin pigment to the linoleic acid suppression rate was 67.75 percents, and was equal to the suppression rate 74.85 percents of VE and 98.90 percents of VC. The grape skin pigment antioxidant activities was fine, simultaneously discovered the extraction was a group of complex with the mutual coordination efficiency function, and the purification was not able to enhance its antioxidant activities. Two branch extracted in turn by the petroleum ether, the aether, the ethyl acetate, N-butanol etc. organic solvent, and discovered that the antioxidant activities material mainly existed in the ethyl acetate department, the result indicated that antioxidant activities substance was possibly polyphenols.
