Encompassing the central task of extraction, aroma composition,the diversificationduring store and process in citrus peel essential oil, choosing the characteristic citrusprocduced in Hubei province,China. Citrus peel essential oils were extracted bySupercritical CO2 Fluid, and aroma compounds were analyzed by using Gas-Chromatogram and Mass-Spectrum (GC-MS) comparatively. Also, polymethoxylatedflavones in citrus peel essential oil were analyzed by High performance liquidchromatogram and high performance liquid chromatogram -Mass-Spectrum. Then, thediversification during store and process in citrus peel essential oil were analyzed by HeadSpace-Gas-Chromatogram-Mass-Spectrum and HeadSpace-Gas-Chromatogram. Throughthe studies above, conclusions were made as follows:1. The extracted ratios of Supercfitical CO2 Fluid were higher than cold-pressed incitrus peel essential oil and separated low- terpene and terpene citrus peel essential oil,and the extracted ratios were3.78‰and 4.56‰, respectively.When we added modifiersin the extraction, the extracted ratio were notability improved, and the extracted ratioswere 8.79‰and 59.03‰, respectively.But the quality of were poor during solventcallback.2. The aroma compositions were analyzed by Bitter orange oil, Jinchen oil,Grapefruit oil, Owari oil using GC-MS. According to the different polar of capillarycolumn and n-alkane, we can assure the names of and the contents of compositions.D-limonene is the main composition of citrus peel essential oil.3. Polymethoxylated flavones in citrus peel essential oil were analyzed by Highperformance liquid chromatogram and high performance liquid chromatogram-Mass-Spectrum. According to the UV, junior mass spectra and senior mass spectra, we canassure 14 species polymethoxylated flavones, but there were 2 species polymethoxylatedflavones unknown, we need further study.4. The volatile compositions were analyzed by HS-GS-MS. Citrus peel essential oilwere degenerative easily during bad environment and process. The contents of volatilecompositions in diversification were analyzed by HS-GS, and the changes of chroma incitrus peel essential oil were analyzed by colorimeter. The higher the temperature, the stronger light during storage and the stronger microwave, the longer time in sterilization,the poorer quality of citrus peel essential oil.
