Amaranthus retroflexus L belongs to Amaranthaceae which has also been called the wild Amaranth, etc.it has a long history for Amaranthus retroflexus L to be used as folk medicine in ancient times,In Chinese traditional medicine, it is regarded to be sweet, cold, inflammation with bleeding, convergence detoxification, heat constipation and other effects, and can be used for the treatment of urinary system diseases, such as hematuria and other illnesses. Through the efforts of modern scientists it has been discovered that Amaranthus retroflexus l rich in vitamins, trace elements and unsaturated fatty acids with high nutritional value, In order to develop Amaranthaceae such as Amaranthus retroflexus l and other plants, we did research in the following areas:1,We summarized the nutritional contents of Amaranthus retroflexus l, Including unsaturated fatty acids, amino acids, trace elements which was described in details, In addition, we introduced the pharmacological efficacy of Amaranthus retroflexus l there has been a long history of drug since ancient times which can be used for anti-inflammatory anti-bacterial, diuretic constipation and other effects. Amaranthus retroflexus L has a really good prospects fordevelopment and can be developed for the health care products, add trace elements or fatty acids, etc. and artificial cultivation can also be regarded for further development of as future vegetable consumption,in order to do Full advantage of this Widly distributed resources in China., Amaranthus retroflexus L can be used as a medicine and do Associated development.2,we got four compounds from Amaranthus retroflexus L through extraction, separation and purification .the four organic compounds'structures were identified according to 1H-NMR,13C-NMR,HMBC,HMQC,1H-1HCOSY,IR,MP,MS and their physical nature.they were :Rutin,α-spinasterol-β-D-glucoside, kaempferol3-O-rutinoside,1-O-β-D-glucopyranosyl-(2S,3S,2′R)-2-(2′-hydroxypentac osanamino)-Octadecan-3-ol,Theα-spinasterol-β-D-glucosideand 1-O-β-D-glucopyranosyl-(2S,3S,2′R)-2-(2′-hydroxypentacosanamino)-Octadecan-3-ol were obtained from the plant for the first time,and 1-O-β-D-glucopyranosyl- (2S,3S,2′R)-2-(2′-hydroxypentacosanamino)-Octadecan-3-ol was discovered for the first time.3,substantial amount of inorganic salt was isolated and purified from Amaranthus retroflexus L, By chemical methods, some of the anions and cations were identified and it shows that Amaranthus retroflexus L has the ability of accumulating nitrate salt for it Contains a lot of nitrate salts, so we must harvest the leaves when it is young.4,We measured the content ofα-spinasterol-β-D-glucoside and rutin in Amaranthus retroflexus L, In the determination , we studied the mobile phase conditions, linear relationship, reproducibility, precision, stability and recovery rate, etc., and determined the content of three batches of samples, the average content of rutin 0.28%,α-spinasterol-β-D-glucoside content was 0.21%.5,Amaranthus is rich in trace elements, we determined the content of trace elements byFAAS, including Mg content of 6705μg / g, Ca content of 732.8μg / g. the Magnesium content is higher than seaweed which is known as the highest centrations content , can be used as a source of trace elements for human complement.Thanks to the limited compound and time,we did nothing on pharmacological aspects,so we need to do further reserch of the compounds obtained by us on the Pharmacology.
