The Chimonobambusa utilis is the specialty of southwest of China, Guizhou, Chongqing and Yunnan. The seasonality and the difficulty of keeping fresh restrained the expansion of plant and operation. So, the project——the preservation and comprehensive utilization of Chimonobambusa utilis bamboo shoots——was included in the agricultural research projects of Guizhou Province in 2008.This paper, which used Chimonobambusa utilis bamboo shoots as main raw material, provided a theoretical basis and technological support for safety product and comprehensive utilization of bamboo shoots product. The results as follows:1, The natural edible coating coating materials and natural antimicrobial agents was used to keep Chimonobambusa utilis bamboo shoots fresh by coating preservation. The results showed: Coating can reduce the respiration rate, transpiration and water loss. And it also can delay aging process and keep a huge nutrient content in bamboo shoots. The best composite edible coating agent is that: 0.6% carrageenan + 0.3% konjak +0.035‰nisin2, Natural color-protection agent was used to protect the color of bamboo shoots products, which can improve the traditional process and do not use sulfur formulations.The orthogonal experiment and related experiments showed that the optimizing preservation process of bamboo shoots should be that: Wash the peeled bamboo shoots, cut off the damaged parts, and then blanch bamboo shoots at 95℃for 5min in the color-protection solution, which is 0.15% (W / V) citric acid +0.05% (V / V) phytic acid +0.3% (W / V ) calcium chloride. Next, bag up the bamboo shoots with color-protection solution, vacuum seal, normal pressure sterilize, and storage at low temperature. It has been verified that this kind of preservation bamboo shoots can be stored more than 6 months and have good quality.3, Total flavonoids was extracted from bamboo shell by hot ethanol extraction, and the optimum extraction process of flavonoids in bamboo shell was that: The extract solution is 80%(V / V) ethanol, and according to solid-liquid ratio 1:60, extract flavonoids at 75℃for 3 hours. Under these conditions, the yield of flavonoids in bamboo shell was 5.78mg / g. The most suitable material in separation of flavonoids from bamboo shell was HPD600 resin, the optimum process of flavonoids separation by HPD600 resin is that: the concentration of sample was 3.89 mg / mL, the pH of sample was 3.0, the sample volume was 7 BV and the velocity was 3 BV / h; when the eluent was 40% ethanol and the volume 6 BV, the desorption effect was the best and the bamboo shell extract powder had 35.12% flavonoids.And the scavenging free radicals in vitro experiments showed that bamboo shell crude extract and purified flavonoid product had a good antioxidant activity. The crude extract IC50 of scavenging·OH,DPPH·and O2-·is 5.25mg/mL,948.95ug/mL and 1.94mg/mL, while purified flavonoid product IC50 of·OH,DPPH·and O2-·is 2.004 mg/mL,22.89μg/mL and 1.13 mg/mL...
