This paper consists of four chapters.In the first chapter of this paper,we summarized the market situation of sweeteners, introduced emphatically the nature of some commonly used sweetener, as well as the main analysis sweeteners detection methods.In chapter two,a quantitative assay for the determination of sugar, such as fructose, galactose, sucrose, maltose and lactose was established by HPLC. Sugar was extracted and the separation was performed with carbohydrate column, acetonitrile/water as mobile phase, Evaporative Light Scattering detector was adopted. The results showed that the linear relation of fructose,galactose,sucrose,maltose and lactose is well in the range of 1~10 mg/ml, the average recoveries in the 93.0-108.9% ,RSD% <2.7.In chapter there,a quantitative assay for the determination of sweetener was established by HPLC. Sweetener was extracted and the separation was performed with Waters Atlantis? T3 column, methanol /water as mobile phase, Evaporative Light Scattering detector was adopted. The result showed that the Acesulfame-K , Saccharin sodium , Sodium cyclamate, Sucralose, and Aspartame showed distinct linearity relationship with the concentration in the range of 0.5~10 mg/mL, the recovery is 87.0%-105.0% , RSD was <4%.In chapter four,a quantitative assay for the determination of sugar and sugar alcohol was established by HPLC. Sugar and sugar alcohol was extracted and the separation was performed with high performance carbohydrate column, methane/water as mobile phase. Evaporative Light Scattering detector was adopted. The result showed that the sugar and sugar alcohol showed distinct linearity relation ship with the concentration in the range of 1~10 mg/mL, the recovery is 89.2%-110.9% , RSD was <2%.
