With the upgrading of China’s meat consumption and the demand growth accelerated, residents consumption of meat quality is enhanced,accompanied by increased emphasis on food safety issues, The meat processing technology exchanges increased accompanied by the rapid development of the industry, However, the current meat processing industry concentration is very low,and there are some quality management problems which affect the development of the meat industry. How to take the necessary measures to ensure the quality and safety of meat products in the production and processing sectors, building quality and safety control system has practical significance.In this paper, the food safety management system for meat processing enterprises is the research object. First,on the basis of the basic concepts and theories, I analyze the current situation of domestic and foreign research. Second, I made a simple analysis of the quality management system and the product quality management of meat products processing enterprises. According to the actual operation situation of LYGY meat processing enterprise quality management system, the system of product quality control system is established by HACCP system. The purpose is to establish the prevention system of quality and safety of meat products.Finally, combining the statistical analysis method, the actual running effect of LYGY enterprise HACCP system is analyzed, which has a reference value for the quality and safety of meat processing enterprises.
