In Wuhai City,Inner Mongolia,there are five types of meat products with the largest sales volume,including sauce and bittern products,smoked barbecue products,dry meat products,fried meat products and sausage products.To understand the safety of five kinds of meat products in Wuhai City in different seasons and different sampling locations,the microbial,additive,pollutant and veterinary drug residues of these five meat products were detected.It aimed to provide data support for local food regulatory authorities to adjust the management mode and strengthen the management of key areas,further to provide production,processing and sales guidance for related enterprises and small workshops.The test results showed that:(1)a total of 256 batches of five types of meat products,11 batches of unqualified samples were detected,with a qualified rate of 95.7%.Among the five types of meat products,the qualified rate of sauce and brine products was the lowest,with a qualified rate of 92.6%.The unqualified items were mainly nitrite and total number of bacterial colonies exceeding the standard.The qualified rate of dry products was95.8%.The unqualified items were all microbial detection items,and listeria monocytogenes were detected;The qualified rate of smoked barbecue products was 96.2%.Nitrite and benzo(a)pyrene were detected once respectively.The qualified rate of fried products was 97.7%,and the main unqualified items were Benzo(a)pyrene.The qualified rate of sausage products was 97.7%.The total number of bacterial colonies and sorbic acid were detected one time respectively.Listeria monocytogenes was detected only in dry meat products,but no Staphylococcus aureus and Salmonella were detected.Benzoic acid,salbutamol,ractopamine,cl enbuterol and chloramphenicol were not detected in the five kinds of meat products.(2)The qualified rate of five kinds of meat products was the lowest in summer,with 93.7%,The unqualified items in summer were mainly the total number of colonies and coliform groups.The qualified rate was 95.2%in winter and 96.8% in spring and autumn,In different sampling sites,the qualified rate of large sampling sites was.97.8%,and the qualified rate of small sampling sites was 96.4%.The qualified rate of sampling points in open-air stalls was 92.5%.
