Since the reform and opening, great changes have taken place in the economic, social and spatial structure of Chinese city under the influences of market, society and policy. Such changes lead the changes of the location and influencing factors of many industries.The paper's research on the location of food service in the central city of Shanghai includes literature review, empirical analysis and theoretical interpretation. For literature review, it summarizes the theories and methodologies in the study of commercial location both international and domestic. For empirical analysis, from the macroscopical, medium and microscopical levels, the paper describes the restaurant-distributing characteristics and analysis the influence of many factors to such distributions. For theoretical interpretation, the paper tries to interpret the underlying reasons of the distribution and the spatial structure of food service from the aspect of the influence of the benefit and cost to the distribution under the macroscopical and medium backgrounds.This research indicates that the location decisions of the managers are made under the considerations of the diversity of consumers' needs and composition, the former constitutes of restaurants in such a location, and other industries' impacts. Such a decision results from the surrounding social, substantial and industrial spatial structures, which can finally decide the food service spatial structure. But the influences of such three structures to the food service spatial structure are different according to the different location and different categories of food service.
