Animal-derived food is one of the main sources of protein, fat and other nutrients for human intake. With the continuous development of science and technology, animal-derived food tends to be diversified; and because of improvements in the global, economy and consumption standard, demand for food of animal origin is also growing. Of the animal-derived food required, pork has been the greatest demand. However, due to frequent safety cases related to animal food in recent years, more and more attention has been paid on the safety problems of animal food and its traceability in order to grasp the source of animal food safety problems. This paper tested the indicators affecting the safety of pork products in the process of feeding pigs and then carried on the traceablity analysis using the pigs from Bayan pig farm in Heilongjiang Province as the research object. The main conclusions are as follows:1.Through investigating from a large number of documents and data, the key factors affecting pork products safety were summarized as follows:1) The polluting effects of poor feeding conditions, therapeutic drugs, antibiotics and hormones on the surrounding environment, which affect the physical health of pigs, and bring troubles to the safety of pork products.2) Impact of feed on pork safety, including toxic substances, heavy metals, pathogenic microorganism, and inhibited additives in feed, are the main reason that leads to the safety of pork products.3) Veterinary medicine use and its residues in vivo will impact on food safety of pork products.2. Results from the sampling survey on feed and production of pork conducted in three farms from Heilongjiang Bayan area showed that:The contents of toxicant, toxic heavy metals metalloids, microbes, pesticides, clenbuterol hydrochloride and drug both in the feed and the body from the three pig farms met health and safety standards of the state.
