Nowadays, Jerusalem Artichoke is wide used as function food and new energy sources. The paper prefers to studying J.A irrigated by various concentration of seawater, and developing agriculture.Four samples of J.A have been irrigated by various concentration of seawater and harvested the tubers in different years.( harvested in 2003, irrigated by 50%seawater;harvested in 2004, irrigated by 0% seawater, 25% seawater and 50% seawater respectively). Wet content was assayed by directly dried. Fat content was done by soxhlet extractor experiments, the VC content was used the 2,6-dichlorindophenol to proceed titration. Reducing sugars were assayed by using the dinitrosalicylate (DNS) method;total sugars were determined by the same method after hydrolysis. Then the contents of trace elements was determinated by AAS.The results show that AAS method is rapid with good precision and accuracy. Correlation coefficients were 0.9971-0.9997.The results suggest that J.A contains much more K,Mg,Na, specially the ratio of K to Na is very high ,and the content order is K>Mg> Na>Fe>Ni>Zn> Cu>Mn with Pb,Cr and Cd. being contained low. In addition some trace elements have difference in various J.A. so it concludes that the concentration of seawater has effect on trace elements. Inulin was obtained from three samples of Jerusalem Artichoke by hot water extraction. The samples had been irrigated by 0%,25%and 50% concentration of seawater and the tubers were harvested in 2004. The effects of extraction, the ratio of solid to liquor and extraction temperature were studied and the technological parameter of the extraction was determined by orthogonal test ( L33). Perhaps it is worth much more utilization.
