Okra, as a kind of fashionable health vegetables around the world, cultivated in all parts though our country at present. Research of its chemical composition, pharmacological effects and the development and utilization are also increasing at home and abroad. As the target component, okra polysaccharide and flavonoids is studied in this paper.The first part is the literature review of the article, mainly introduces the overall situation of present domestic and foreign research on okra, including its plant morphological characteristics, distribution, cultivation, chemical composition and pharmacological activity. The second part of the article as the experimental section, divided into the following four chapters.1. Anti-fatigue research of okra polysaccharide:After the oral medicine for28d, evaluate the anti-fatigue activity in mice of okra polysaccharide through the determination of weight loading swimming experiment and biochemical indicators.2. The response surface method to optimize the extraction technology of total flavonoids of okra pod. Optimize the extraction process for total flavonoids of okra pod by CCD experiment design and the result of the response surface analysis. It is concluded that the best condition is:material liquid ratio is1:20, extracting time is2.0h, ethanol concentration is65%, extraction temperature is85℃. The content of flavonoids extraction in okra pod is1.630%.3. Separation, identification and content determination of the two kinds of flavonoid glycosides:two kinds of flavonoid glycosides compounds is got from okra pod by using polyamide column chromatography and preparative HPLC chromatographic, respectively, Isoquercitrin and quercetin3-O-gentobioside. Determinate the content of quercetin3-O-gentobioside.4. Anti-AGEs activity of quercetin3-O-gentobioside:In the protein glycosylation system of mixed D-fructose, explores the inhibition of quercetin3-O-gentobioside, the result is59.38%.
