Selected 30 male and female F2 ovis aries fixed athwart cross between Dorset sheep and Small Tail Han sheep which breeded under the same standards and 4,6,8 and 12 months old, measure them weight and size, and establish the growth curve. Take 4,6,8,12 months old lambs butcher directly, and measure the live weight before butcher, carcass weight, dressing percentage and backfat thickness. At the same time , take longissimus dorsi and biceps femoris muscle tissue samples from slaughtered lambs in that four groups .And using conventional methods to analysis the meat quality, using real time quantitative PCR method to detect the expression of H-FABP mRNA in different tissues of sheep. Selected 100 rams and 40 ewes from population of the mutton sheep, measure them physical properties of wool and wool yield. The results are as follows:1. Male and female lambs get a better weight growth curve, the R2 is 0.9605 and 0.9676 respectively, and the fastest-growing months of age were 4.8 months and 5.4 months of age. And the limit weight were 51kg and 61.9kg respectively.2.Slaughter test showed that the dressing percentage increased significantly in the 4-6 months of age,and begen to reduce during 6-8 months of age. The carcass weight,pre-slaughter live weight and backfat thickness was increased significantly between 4-6 months of age ,but it has no significant effect after 6 months of age.3. Meat quality tests showed that the biceps femoris and longissimus dorsi muscle have difference shearing force in different month-old lambs. The shearing force increase significantly before 8 months age, then it's not significant afer 8 months old later. The PH of Biceps femoris and longissimus dorsi muscle during different month age were not different.Water content and water loss rate are differences only between 4 and 6 months old, there was no difference after 6 months of age. With the growth of age the intramuscular fat increase, and it's significantly in 6-8 month old.4. Wool quality analysis shows that the wool of ram is half fine-wool, and ewe's wool is fine-wool. Rams'wool yield is higher than ewe s', and the difference was significant, but rams'net gross ratio was significantly lower than ewes'. Rams Wool length, breaking strength and breaking length are better than ewes', and the difference was significant. The correlation analysis show that, ram wool crimp had significantt correlation between ensile strength and fineness of wool, and fracture length had significantt correlation between fracture strength and fineness, and breaking strength had significantt correlation with fineness correlation too. The relationship between Breaking strength and breaking length was very significant; ewe's wool crimp had significant relationship between fineness of wool and the fracture length, and breaking length were significantly correlated with breaking strength and fineness.5. Quantitative analysis, the expression of H-FABP gene in the biceps femoris, longissimus muscle and heart is gradually decreased with the growth of months.
