Bee pollen contains proteins, carbohydrates, unsaturated fatty acids, vitamins, minerals and nutritional composition and other features material, this has a high nutritional value, and has anti-aging, beauty, prevent cardiovascular disease, liver , strengthen the role of gastrointestinal function. However, the presence of bee pollen wall hinders the absorption of its internal components, and therefore the broken deal.This study used a complex protease, neutral protease, protease and flavor of protease treatment of broken pollen, from which select the best combination of ultrasonic effect of protease treatment of bee pollen, in order to further enhance the enzymatic effect. And the effects of various enzymes were characterized by broken assessment, evaluation indicators include the value of specific surface area, particle size analysis, Zeta potential, environmental scanning electron microscope.
