In this article, rape bee pollen enzyme kinetic of broken were studied by enzyme kinetic of broken experiments and by IR and UV spectra analysis and ICP-MS determination of trace elements and by comparison whether wall-broken or not before and after. It shows that the advanced, the superiority and the practicality of composite digestion broken method and it provides more specific and more effective guidance in theory and method of operation. The enzyme broken ways of rape bee pollen is proven by practice that is simple, low cost and efficient. There is no doubt that is extremely important scientific significance and very objective practical significance.Here use Qinghai rape bee pollen as material in this experiments, research enzymatic kinetics of rape bee pollen wall-broken, and discussed several influence factors such as the amounts of enzyme, pH,concentration of solution, liquid temperature, shapes of rape bee pollen, stirring rate, etc.The flavonoids of rape bee pollen are kinds of secondary metabolites, they are important physiological activities the same as polysaccharides . Flavanone (Eriodictyol) and content of metal ions were determined differently by UV and infrared spectra and ICP-MS. The best condition was discovered in the wall-broken process through orthogonal experiment: liquid temperature-25℃,solution pH-3.5,solution density-25%, Stirring speed- 100rev/min.In the best conditions, the rate of wall-broken in Qinghai rape bee pollen is:91%, yield is:60%.The results show that: The content of toxic elements are detected that below the detection limits(0.05mg·mL-1)and the content of flavonoids in Qinghai rape pollen is more higher, the content of life elements and rare elements are abundance. The wall-broken rate of rape bee pollen is more higher. It is benefits that release the nutrients and become a natural pollution-free food. Rape bee pollen has always been taken seriously in many health-care resources and always regarded as promising food resource in this century. Recently, trace elements once again aroused interest in the study by practical value of biological effects, physiological function and clinical treatment. With further in-depth study of pollen, it will creates more value to human being.
