Vegetable, a kind of necessary food in life, is close related to the public health especially for its pesticide residues. In China, vegetable is produced by thousands of households, and distributed by thousands of households. It's very difficult to solve the problem of pesticide residues effectively if we rely solely on market mechanisms. The government has the responsibility to strengthen inspecting and supervising the pesticide residues in vegetable. Therefore, it is necessary to establish a market supervision and inspection system for the safety of vegetable, to keep social stability and economic developing.In this paper, pesticide, pesticide residues, and their hazards were described. The environmental conditions of vegetable growing areas in the City were related to environmental impact assessment, and vegetable growing in Baotou City in the pesticide residues in vegetable crops were investigated and analyzed, and studied the degradation and elution of certain pesticides.and reach the following conclusions:(1) The national prohibit the use of highly toxic, high residue of pesticides on humans and animals in vegetable of Baotou City is no longer used, which have no residues. Countries to encourage the use of low toxicity, low residual pesticide residues in vegetables were also, residues within the limits of national standards.(2) A variety of cleaning methods can remove some pesticide residues, if water, as water temperature increased, lengthening the processing time and enhance the alkaline can removal better. Detergent treatment also can remove some pesticide residues, which are marked with fruits and vegetables of detergent than the average efficiency better.
