The nutrient components of shoots of Arundinaria oleosa(Wen)C.S.Chao et G.Y.Yang during development under the natural condition were analyzed. As a comparision, the nutrient components of the shoots from the experiment plots where the ground of the bamboo forest was covered with rice chaff in winter. The seven samples were analyzed with GC/MS. The main results are as follows:1.With the aging of the bamboo shoots, under the natural condition the content of water, soluble sugar and fat showed a trend of decrease. The change of range was as follows: 91.30%→90.78%, 0.53%→0.44%, 4.27%→2.77%. In contrast, the tendency of protein, tannin, acidic fiber content was increase. The change of range was as follows: 48.9→52.5(mg/g fresh weight), 0.17%→0.22%, 8.80%→12.23%. The mineral elements content was decrease obviously. The ash content rose first and fell later 8.82%→9.01%→7.96%. Generally speaking, the total content of the amino acids was decrease. The content of essential amino acids, bitterness amino acids, sweetness amino acids was also increase with the aging of the bamboo shoots, the change of range was as follows: 12.26%→13.18%, 24.92%→26.62%, 18.70%→19.74%. While freshness amino acids decreased with the increase in age.2. The change of the nutrient components (protein, amino acids, fat, soluble sugar, acidic fiber, vitamin C, tannin and water) in bamboo shoots under the covered condition showed the same trend with its under the natural condition, while the change range was different. The content of K, Ca, Mg, Mn and Na rose obviously with the increase in age. While the change of Fe, P and Zn content was not obvious. The ash content showed a trend of increase, the change of range was from 8.58% to 9.79%.3. After analyzing with GC/MS, five kinds of compounds which all contained in the seven samples were found. They were Thymine, Indolizine 2,6-dimethyl, Propanoic acid octyl ester, Hexanoic acid 4-oxo methyl ester, 6,8-Dodecadien-1-ol (6Z,8Z). The total content of these five compounds in each sample all exceeded 50%. So they were the main components of each sample. The content of Propanoic acid octyl ester was the highest. Its content was rising with the increase in age under the two kinds of conditions.
