The comparative studies on muscle composition, blood index and immunity function of age-1+ -age-4+ Salvelinus malma were conducted from April 2005 to October 2005. Thirty cultured fish in each age were collected and 10 were used for analyzing (n=10).The results were as follows:1 .No difference was detected in muscle composition of Salvelinus malma in different growth periods, while the content of nutritional components was different. The water content was decreased followed by growth, but crude protein, crude fat and crude ash were increased. The changes in content of amino acid and fatty acid were found.The content of nutritional components:The water content of Salvelinus malma in age-2+ was lower (P>0.05) than age-1+, but in age-3+ it was significantly (P<0.05) low compared to age-l+ and age-2+. In age-4+ it was insignificantly (P>0.05) low compared to age-3+ and was significantly (P<0.05) low compared to age-1+ and age-2+The crude protein of muscle in age-2was significantly (P<0.05) high compared to age-1+, and it was significantly (P<0.05) high in age-3+ compared to age-1+ and age-2+. In age-4+ it was higher (P<0.05) than in age-1+ and age-2+, but lower than (P>0.05) in age-3+.The crude fat of age-2+ was significantly (P<0.05) high compared to age-1+. In comparison with age-1+ and age-2+ the crude fat in age-3+ and age-4+ was significantly (P<0.05) high. However, no significant (P>0.05) differences were found between age-3+ and age-4+.In comparison with age-2+, age-3+ and age-4+, the crude ash in age-1+ was significantly low (P<0.05). No significant (P>0.05) differences were observed among age-2+, age-3+ and age-4+The amino acid and fatty acid contents:Amino acid composition in different growth periods was identical, but amino acid content was different. There were no significant differences in the content of individual amino acid of different growth periods except for He, Val and Pro. The fatty acid content was high and increased in Salvelinus malma followed by growth. The content of C18:3-γ was stable among different growth periods.2.
