In the first chapter of the article, we take the development of alfalfa industrialization as study object, combining the application value of alfalfa in agricultural production, through survey and analyse, we dissertated the problems which exist in the course of alfalfa industrialization, and put forward concrete strategy about developing alfalfa industry: improving the consciousness, updating the idea; making mechanization production unite with planting in large scale; do well the construction of base and the enterprise which is in the highest flight, and enhance the commercial pasture; form a mode that is "market to media organization to farmer"; invest more science and technology in alfalfa industry; and make government control the course of alfalfa industrialization by policy instrument and service system.In the second chapter, we examined the alfalfa bud, mensurated its amino acid and minerals content, and these content index of alfalfa buds compared with common vegetables. Several conclusions have been drawn from this study:1. Crude protein content of alfalfa bud is 32.90%, containing 18 amino acid (25.27%), and including 9 essential amino acid(9.34%) for human, the aspartic acid(Asp) content is the highest, and the lowest one is tryptophan(Try) among essential amino acid.2. In alfalfa bud, essential amino acid account for 37% of total amino acid(E/T), and the ratio of essential to nonessential amino acid(E/N) is 0.59, they are respectively closed to the standard of WHO/FAO that is 40% and 0.6,respectively and belong to the high quality protein.3. To evaluate the essential amino acid of alfalfa bud by adopted ratio coefficient of amino acid, and elicit the score of ratio coefficient (SRC) is 64.46, tryptophan is the first limited amino acid.4. Essential amino acid of alfalfa bud compared with the need pattern of essential amino acid for human, Leu, Lys, Phe+Tyr, Thr, Val content in the alfalfa bud approach or meet the adult's requirement, whereas the rest can't meet the need.5. Total essential amino acid content of alfalfa bud (86.8mg/g) is higher than potato61.43, carrot27.42, garlic65.73, celery32.19, celery cabbage29.29,garlic65.73 and wax gourd by compared with 8 common vegetable (potato, carrot, spinach, garlic, celery, wax gourd, fungus and celery cabbage), so its nutritional value is high as vegetable.6. There are 9 minerals (K, Na, Mg, Fe, Zn, Mn, Se, Ca, P) in alfalfa bud, the K content is highest (2.615%) among them, and the following is Ca1.6%, Mg0.39%, P0.2%, Na0.068%, Fe0.044%, Se0.0049%, Zn0.0042%, Mn0.0042%.
