Ten physiological and biochemical characters of leaves of fourteen chewing cane varieties were analyzed at tillering stage, early elongating stage, middle elongating stage and maturing stage. It was found that ten physiological and biochemical characters of leaves were significantly different at different growth stage. It showed that metabolism was different between chewing cane varieties. Correlation coefficient was showed that the contents of chlorophyll were significantly correlated with the contents of carotenoid and the contents of the soluble sugar were significantly correlated with carbon-nitrogen ratio (C/N) at different growth stage. The correlation coefficient between others characters was different at different growth stage.Factor analysis was applied to study output and quality traits of fourteen chewing cane varieties. The results showed that the cumulative contribution rate made by the five main factors was 93.71%. The first main factor was formed of sugar and sugarcane maturity. Stalk height, stalk weigh and cane yield per hectare owned higher factor loading values in the second factor. Only stalk diameter played primary roles in the third factor and stalk height and cane number per hectare owned negatively higher factor loading values. The contents of aminophenol in juice played primary roles in the fourth factor. The fifth factor was mainly dominated by cane fibre and deoxidation sugar in juice. The first factor was negatively correlated with the fourth factor. The second factor was positively correlated with the fifth factor.Canonical correlation analysis of ten physiological and biochemical characters of leaves, five yield characters and five quality characters were conducted at different growth stage to study the influence of physiological and biochemical characters of leaves to yield characters and quality characters. The results indicated that in the combination of affecting quality characters there was positive correlation between the contents of carotenoid and sucrose contents in cane, between the contents of the soluble sugar and water in cane, deoxidation sugar in juice at tillering stage. There was positive correlation between the contents of chlorophyll, the activity of the catalase and sucrose contents in cane, between the contents of soluble protein and cane fibre at early elongating stage. There was positive correlation between the soluble Mg-ATPase and cane fibre, there was positive correlation between the contents of the soluble sugar and sucrose contents in cane, and negative correlation between carbon-nitrogen ratio (C/N) and water in cane at middle elongating stage. There was positive correlation between the contents of carotenoid and sucrose contents in cane, but there was negative correlation between the contents of the soluble sugar and deoxidation sugar in juice at the maturing stage. In the combination of affecting yield characters there was positive correlation between the contents of the soluble sugar and stalk weigh, there was negative correlation between activities of the peroxidase and cane yield per hectare, between carbon-nitrogen ratio (C/N) and stalk height at tillering stage. There was positive correlation between carbon-nitrogen ratio (C/N) and stalk weigh, but negative correlation with stalk height, there was positive correlation between the contents of carotenoid and stalk weigh at early elongating stage. There was positive correlation between the soluble sugar and stalk weigh, between the contents of chlorophyll and cane yield per hectare, there was negative correlation between activities of the peroxidase and cane yield per hectare at middle elongating stage. There was positive correlation between the contents of the soluble sugar and cane yield per hectare, stalk weigh at maturing stage. The results that canonical correlation analysis between five yield characters and five quality characters showed that there was positive correlation between cane yield per hectare and water in cane but negative correlation between cane yield per hectare and sucrose contents in cane.Subordinate function value analysis was used to evaluate on anti-oxidation comprehensively based on the contents of chlorophyll, activities of the superoxide dismutase, activities of the peroxidase and activities of the catalase. The results indicated that the anti-oxidation of min xuan 703 is the highest and jin hua chewing cane is the lowest.
