The distribution regularity of adipose tissues about different parts of Yangzhou Goose were researched, the accretion and transmutation in different physiological period of adipocyte from Yangzhou Goose were studed by means of cytobiology, and reseach on the fatty acids composition and relative amount to appraise nutritional value of fatty acids of different tissues from Yangzhou Goose.The findings showed that:1. Adipose tissues of Yangzhou Goose distributed widely and that can be classified for 5 main parts: abdominal fat, subcutaneous fat, fat come from thigh and belly juncture, neck fat and mesenterium fat. The ratio of different adipose tissues to eviscerated weight are: abdominal fat was 0.86%~4.38%, subcutaneous fat was 16.46%~30.20%, fat come from thigh and belly juncture was 0.33%~1.71%, neck fat was 0.22%~0.74% and mesenterium fat 0~4.83%. Subcutaneous fat was the most, the second is Abdominal fat and then was the fat come from thigh and belly juncture.2. Diameter, volume and numbers of adipocyte of Yangzhou Goose are significantly influenced by different physiological age and gender. The diameter of adipocyte are 68.11μm to 103.92μm, numbers of adipocyte are from 1.7730×106 to 6.3246×106 per gramme. Subcutaneous fat deposited and matured earlier than abdominal fat, the cell growth are easy to be stenoplastic. The female goose is fatter than male, because female goose has more numbers of adipocytes.3. The total amount of UFA in abdominal fat and subcutaneous fat was significantly higher than muscular tissue, liver and the total amount of SFA is on the contrary. The main reason of higher amount of UFA is the more MUFA.It is greatly influenced by different physiological age of the main fatty acids content of breast muscle, which is better in 60-day goose than in 320-day. The difference of IMF in leg muscles was fewer than breast muscles, the nutrition in leg muscles was more stenoplastic than in the other tissues. It is greatly influenced by different age and gender in liver, the 320-day goose have more EFA and the ratio ofω-6:ω-3 was more approach to the recommendation of WTO and Chinese Soclety of Nutrition.4. The physicochemical property of extracted oil from abdominal fat and subcutaneous fat of Yangzhou Goose was: the iodine value of abdominal fat and subcutaneous fat was 70gI/100g, which was similar to each other. The result showed that, the degree of unsaturation was high but no significantly difference between them. The acid number was 0.76~0.77KOH/g, which consistent with our national regulation of edible oil. From the peroxide value we can conclude that there is great difference in the degree of unsaturation between 60-day goose and 320-day goose, which was the reason of the differential oxydation ability in difference tissues and physiological period.5. The comparison of the fatty acids composition and content between other livestock, poultry and Yangzhou Goose. The content of SFA in Yangzhou Goose was lower than livestock and part of poultry, ingesting the same amount of SFA from animal foodstuffs, the SFA from Yangzhou Goose was more healthy than the others, the amount of PUFA in Yangzhou Goose was lower than in fish and some poultry, but higher than in livestock and the other poultry, the amount of AA, EPA and DHA was higher than the others, EFA in Yangzhou Goose was the most in all the poultry, livestock and fish.
