It set up a good method of pigment analysis by studying the way of lipid-pigment of greentea, studied the processing of Gao Qiao Yin Feng and analyzised the products by the method,discussed the mechanism of appearance color during the green tea processing in ordor to offera technology for green tea manufacture.1. It firstly established a fixing sample method of freeze-drying for tea pigment and contentanalysis. Which was done under lower temperature and could prevent the content from theeffects of higher temperature, and so a better, reliable result was got.2. It put forward that the direct extract way for extracting pigment of bulk tea samples was afeasible method, which simplized operation and improved the efficiency of lipid pigment ofgreen tea.3. It validated the application of HPTLC in analyzising tea pigment, considered that themethod was correct, quick and effective.4. It studied the changes of pigment and content of Gao Qiao Yin Feng during theprocessing. The results showed that the lipi-pigment decreased during the processing, especiallyin the fixing, initial drying and final drying, and the chlorophylls decreased 40.71ï¼…, 36.89ï¼…,19.20ï¼…respectively, and pointed out that it is good to form the appearance color by controllingthe temperature and the velocity of water losing during the fixing processing, taking a step bystep drying with lower temperature during the drying processing, replacing the roling dry withbasket dry.5. It pointed out that the content of pigment in the fresh leaves could not determine thevariety was suitable to make green tea, and should consider with the content of tea' polyphenolsas the content of polyphynols affect the chlorophyll during the processing, and only the varietywhich had higher chlorophyll and relative content of polyphenols could form a good appearancecolor.6. It proved again that the different varietis had different lipid pigment, which changed withseason and it is good to form the appearance color in the spring and autumn.
