Objective: Garlic (Allium sativum L) belongs to genus Allium , which can be used as food and medicine . Many studies show that garlic has good pharmacological effect , such as anti-tumor, antimicrobial activity , reduce blood lipids and so on . Today China is the largest garlic production country and consumption country in the world , and export garlic as a vegetable to 131 countries and regions , such as the United States, Germany, Japan. However, The origin of garlic is the Central Asian region , including China's Xinjiang Tien-Shan Mountains . Garlic germplasm resource is rich in Xinjiang . The content of alliin is high in Xinjiang garlic which can be used for pharmaceuticals. It is a good prospec for the development of Xinjiang garlic pharmacognosy study, deep processing of garlic , promotion garlic industry. Method: The subject chooses Jimusaer which is production base for garlic as the research base after investigation and comparison of Xinjiang garlic resources . To make references to the requirements of " Good Agricultural Practice for Chinese Crude Drugs " , investigate ecological environment of garlic origin , the growth characteristics of garlic , morphological descriptions, cultivation techniques, processing and storage in Jimusaer. Carry out the quality standard research of white skin garlic and violet skin garlic from Jimusaer , then establish the quality standard of garlic . The content of quality standard including microscopic identification, physical and chemical identification, moisture, total ash and acid-insoluble ash, heavy metals , determination the content of alliin in garlic and so on . Second, garlic polysaccharide is one of garlic deep processing products. The garlic polysaccharide can be used for the development of health food products. Finished the quality testing of seven batches garlic polysaccharide from pilot production, then establish the food quality standard of garlic polysaccharide. The content of quality standard including characters, identification, moisture, total ash, solids, heavy metals, determination the content of the total sugar and polysaccharide in samples. Results: Jimusaer is suitable for the cultivation of garlic in the topography, climate, soil and other ecological factors. garlic production bases is away from chemical plants, mine and other pollution sources. Garlic production have a certain scale in the region. The production is relative concentrated. The garlic farmers have much experience on garlic cultivation, processing and store. But the atmosphere, water, soil sample of garlic production base need to detect in order to ensure the heavy metals and pesticide residue of garlic in the safe range. Developed the quality standard draft of garlic and the food quality standard draft of garlic polysaccharide, it is good for control of the quality of garlic and garlic polysaccharide. Conclusion: Study the garlic pharmacognosy and garlic polysaccharide quatlty standard, it is a good prospec for cultivate the high effective component garlic, establish the GAP garlic production bases, develop the deep processing of garlic product in the future.
