The proportion of amino acids in rice protein is reasonable and better for animal nutritional needs.The ferrous chelate of the amino acid and protein peptides are more stable,and easily for body absorption and use by animals.The extracted yield and degree of hydrolysis as the reference system are used to investgate optimal conditions of rice protein hydrolysis by trypsinase.Through the single factor and the orthogonal experiment,the best conditions for protein hydrolysis of rice dregs were got as follows;1.0%of enzyme,the liquid-solid ratio at 1;5,pH at 8.0,hydrolysis temperature at 50℃for 3.5 h.The optimal parameters of spray drying; isotropic pressure 50MPa,inlet air temperature of spraying at 190℃,outlet air temperature of spraying at 100℃,the inputing quantity at 25mL/min,inputing stream pressure by 0.10kg/cm~2.The degree of hydrolysis and extracted yield of the end product were 8.51%and 63.72%,respectively.The determinated results by nanometer instrument showed the granularity of rice protein peptide with good rehydration properity was closed to that of milk protein grain.The content of protein in the product reached high as 72.19%.The end products of pepide would be used as nutritional protein staff and is suitable for further chelating with trace elements.Ferrous sulfate and rice protein peptide mentioned above had been used for producing ferrous chelator by nitrogen protection.The degree of chelation as the reference system is used to investgate optimal conditions of chelation reaction. Through the single factor and the orthogonal experiment,the best conditions for degree of ferrous chelator were got as follows;the molar ratio of polypeptide and ferrous sulfate at 2;1,pH at 6.5,temperature of chelation reaction at 35℃for 40 min, the inputing pressure of nitrogen at 0.03-0.05 Pa.For optimal condition investigation of ferrous chelator with amino acids,the results showed as following;molar ratio of Glycine and ferrous sulfate at 3;1,pH at 6.5,chelating temperature at 40℃for 30 min;The molar ratio of Lysine and ferrous sulfate at 2;1,pH at 7.5,chelating temperature at 40℃for 40 min;The molar ratio of Methionine and ferrous sulfate at 2;1,pH at 7.0,chelating temperature at 35℃for 30 min. 80%of ethyl alcohol was used for isolation of ferrous chelator by revolving vaporization and vacuum drying at 60℃.The purity of rice protein peptide ferrous reached high as 98.7%and ferrous content was 9.77%in the end product.The technological parameters of spray drying of ferrous chelator were shown as following; inlet flow rate at 21mL/min,the temperature of inlet of spraying at 200℃and the temperature of outlet wind at 110℃.The purity of rice peptide ferrous chelator reached at 97.6%and ferrous content was 9.35%in the spraying dried product.0.02% of ferrous by each sample was dispersed evenly in palm oil,camellia-oil and soybean oil in an oven at 60℃.Peroxide values in amino acid ferrous and peptide ferrous chelator systems were more stable compared with that in ferrous sulfate system.Infrared Atomic absorption,Nanometer instrument were used for analysing the quality of the ferrous chelators.Size of granularity was distributed between 200 and 500 nanometer.The ferrous chelators were more even and stable in the oil disperse system.Ferrous contents could maintain over 9.0%and had a significant bacteriostasis effect to Staphylococcus and Bacillussubtilis.
