Siraitia grosvenorii(Swingle)C.Jeffrey,a member of Cucurbitaceac,mainly distributingin Guangxi,Guangdong,Hunan and Jiangxi province in China,is use as Chinese folk medicine to ease pain,relieve cough,detoxifcation and so on for 200 years.It was reported that roots,leaves and fruit Siraitia grosvenorii can be used for treating diseases of systems of breath and digest.In order to deeply investigate the chemical constituents,the fruitof Siraitia grosvenorii(Swingle)C.Jeffrey were extracted,separated,and the structures of thechemical constituents were identified in this dissertation.Have studied and soaked the technological process which mentions three terpene soap glucoside chemical compounds from the arhat in the fruit in this experiment,have probed into several factors influencing the soap glucoside chemical compound to soak the appearing rate.Have adopted different density ethanol aqueous solution of the same time to soak and carry and not mention with sodden time purely,and three groups,such as different solvent amounts of the same time,etc.contrast the experiment.Will soak and mention the liquid after several processes of filtering,clarifying,absorbing,eluting,concentrating,be dry,weighing etc., make the thick soap glucoside chemical compound finally.Weigh comparing.The result shows:Under time the same terms,taking water as solvent soap glucoside get rate get than ethanol aqueous solution rate high,but the extract making the solvent income with 50%of the ethanol aqueous solution is more pure;Under different conditions of solvent consumption,the solvent amount is that 6 times of the raw materials quantity are more suitable;Under different time terms,is it happen pretty much the same total amount of thing to soak.So,in this experiment,the choices of solvent and consumption are main factors influencing the soap glucoside chemical compound to soak the appearing rate. Using comparison evaluation tests,the equisweet sucrose concentration and therelative sweetness of Mogrosides had been determinded.The more contents ofmogrosides,the higher.When the different sweeteners were at lower concentration,anappropriate product can be obtained with a higher sweetness,good taste and flavor,the flavor of mogroside V were better than that of 11-oxo-Mogroside V,becausethere is difference of their structure.
