Propolis is one kind of natural active substance collected by honeybees from various plant sources,the ingredients mainly include flavonoids, phenols, esters, terpenes, vitamin and minerals ,etc,and propolis has a number of healthcare functions,such as antivirus, antioxidation and enhance immunity, etc. With the improvement of people's living standard, more and more people pay attention to the healthy care function of propolis and the researches on the propolis were captured much attention.The main research contents of the paper include two aspects:(1)The technology of propolis extraction has been studied in this paper. The optimal conditions for the extraction of propolis with the method of organic solvents and ultrasonic extraction were found by single factor experiment and orthogonal experiment according to the result of total flavonoids extraction rate:the organic solvents was ethanol, the ratio of liquid and solid was 15, the ethanol concentration was 85%, the extraction time was 20h, the extraction temperature was 40℃,the ultrasonic extraction time was 12min.Under this optimal conditions for the extraction of propolis,the rate of total flavonoids extraction was 89.37%.(2)The stability of major active substance such as flavonoids in proplis has been studied in this paper, and have made a research on the influence of different storage conditions to the total flavonoids content, the active flavonoids such as rutin, quercetin and kaempferol, the phenols content,the iodine value,the oxidation time of propolis. Using the statistics method to analyse the results showed that the propolis stored in -18℃had no statistically significant difference in the major active substance content of propolis after 80days;the propolis stored in 2℃had statistically significant difference in the oxidation time and the active flavonoids such as rutin, quercetin and kaempferol of propolis after 80days; the propolis stored in 30℃had statistically significant difference in the all major active substance content of propolis after 80days.According to the result,during the 80days,the stability of major activesubstance in propolis stored in -18℃> the stability of major active substance inpropolis stored in 2℃>the stability of major active substance in propolis stored in30℃.
