42 Song Liaohei pigs with average body weight of 90 kg were used to study the effect of calcium chloride and calcium formate on pork quality.The two calcium sources were added at three levels of 0.5%,1%,1.5% respectively.At the beginning of experiment,42 pigs were assigned randomly into six experimental groups and one control group,and each group had 6 replicates.After 7 days-feeding trial,butcher trial and laboratory analysis,information of growth performance,carcass indices,meat quality and content of calcium in muscle and serum were collected.The result showed that:1.Pigs' average daily feed intake(ADFI) and average daily gain(ADG) were decreased with increasing level of calcium in diet(P<0.01) and diet of calcium level of 1.5%had the most significant effect.However, calcium formate improved average daily feed intake(ADFI) and average daily gain(ADG).When pigs of calcium formate group were supplemented with diet of calcium level of 1.5%,ADG had a tendency to be decreased.But there was no significant difference between calcium formate groups included calcium level of 1.5%and control group(P>0.05).2.There was no obvious effect of calcium chloride and calcium formate on slaughter rate(P>0.05).But there was a significant effect of calcium chloride and calcium formate on backfat thickness and eye muscle area.Pigs of calcium chloride group supplemented calcium level of 1.5%had lower backfat thickness(P<0.01).Backfat of pigs of calcium formate groups were improved by diet of calcium level of 1%(P<0.01). There was no difference of calcium chloride groups included calcium levels of 0.5%and 1%and calcium formate groups included calcium levels of 0.5%and 1.5%in backfat thickness(P>0.05).Eye muscle area had a tendycy to be decreased with increasing calcium levels of calcium chloride groups(P<0.01).There was no effect of calcium formate on eye muscle aera(P>0.05).3.There was no significant effect of calcium chloride and calcium formate on meat quality indices(P>0.05).But there was significant effect on content of calcium in muscle and serum.The effect of content of calcium in muscle:content of calcium in muscle of all of the experimental groups were higher than control groups.With the increasing calcium levels content of calcium in muscle of all of the experimental groups Were increased.When the supplementation of calcium at a level of 1%,content of calcium in muscle of calcium chloride and calcium formate groups were not increased,but were stable. Content of calcium in muscle of calcium formate groups were higher than calcium chloride groups at calcium levels of 1%(P<0.05). Result of content of calcium in serum:content of calcium in serum of calcium chloride and calcium formate groups were higher than control groups,and the effect of calcium formate were better than calcium chloride on pigs.To sum up,average daily feed intake(ADFI),average daily gain(ADG),backfat thickness and eye muscle area of Song Liaohei pigs were decreased by calcium chloride.And average daily feed intake(ADFI),average daily gain(ADG),and backfat thickness were increased by calcium formate.Both calcium chloride and calcium formate can increase content of calcium in muscle and serum.From the overall viewpoint,effect of calcium formate on pork quality was better than calcium chloride.
