The quality of rice is the basic characteristic in the commodities circulation.It's depends on the combination affects of genotype and environmental conditions.Its formation has direct or indirect relations with the formation and the content of the rice arnylose and protein substances,the nutrients and environmental factors.It's the external reflection of the chemical composition and physical structure of rice.The opaque part in the endosperm of rice is called chalk,it is an important indicator of rice quality evaluation.It's formation is the results of a variety of ecological and environmental factors.In this study,we choose a number of varieties for the material which have the significant differences in panicle and chalk,and analysis the differences of white core rice kernel and white belly rice kernel which have different genotypes,compared their differences trend in different tablets(the upper,middle and lower part,one and two rachis branch)of the same spike and the relation with variety panicle.We aim to provide the pre-trial basis for the further study of the formation mechanism and other issues of chalk.Amylose content is an important indicator to measure the quality of rice.A large number of studies show that amylose content is an important trait to impact the cooking,eating and processing quality of rice.This study focused on the analysis of the different amylose content in different varieties and the relationship between the amylose content and cooking and eating quality.To enhance the nutritional quality of rice by improving the protein content or lower the phytic acid and other anti-nutritional factors is an important direction in improving the quality of rice and developing the function rice.This study analyzed the different components of phytic acid and protein content of 34 rice varieties (lines),we studied the distribution of phytic acid and four kinds of protein.Analyzed and discussed the relationship between the phytic acid content,protein content and the main component of mineral elements in the rice on the basis of the analysis of K,Mg, Na elements in differences rice.This paper studied and analyzed the variety differences and tablets characteristics of rice quality,the variety differences of amylose content and their relation with other characteristics,the relationship between the phytic acid content,protein content and the main component of mineral elements in the rice and their varieties differences.
