Pleurotus eryngii,also was named side-ear-eryngo,belongs to Basidiomycotina,Hymenomycetes, Homobasidiomycetidae,Agaricales,Pleurotaceae,Pleurotus.Pleurotus eryngii were rich in nutrition,it has fertile meet and the smell of it was so delicious,It smelled like abalone,and someone also nameed it abalone mushroom.It has high edible value and officinal value and belong to a sort of rare mushroom.It was reported that Pleurotus eryngii has something to do with bowel,facial and anti-tumor and other uncertain functions.It was introduced to every country as the edible mushroom by Food and Agriculture Organization.There were plenty of nutritional ingredient in Pleurotus eryngii,and the content of polysaccharide are more than common edible mushroom.Unfortunately,few research can be found about polysaccharose of Pleurotus eryngii which was produced by liquid fermentation,and it was so hard to find research about antioxygen.Present research focused on carpohole.This thesis invesgitating polysaccharide that was fermented by deep liquid fermentation and the extracting method and purificating method as well aspharmaco-function.After that the antioxygen activation of Pleurotus eryngii leavening's polysaccharose and the method and conditions of extraction and the method of purification were researched,The main result of this experiment were following:Because of its benefits that were short cycle time,low cost,high yield and so on.Liquid fermentable technique was regard as perfect way for producting edible mushroom.We got the optimal conditions by experiment that was 150r/min,26℃,pH 7.0,9days,100ml/250ml and suitable carbon source was glucose, suitable nitrogen source was peptone.The biomass of mycelian was 14.30g/L.There were kinds of methods for extracting polysaccharide in related reference,four methods were chose and microwave assist extract method was ascertain as the best way.The optimal extracting conditions were: power:600W,exposure time:3min,water-bath temperature:80℃,heating time:1h,final alcohol concentration:80%.The extracting rate under this conditions was 15.7%,the content of polysaccharide was 34.4%.The Sevag agent method was chose for deproteinization,the proportion of chloform and n-butanol was defined,it was 5:1.3 times can reach perfect effects through determining the content of protein.And then decolor,dialysis and other purifying were processing.The purity of refined polysaccharide was 89.3%.This thesis did experimental analysis of Pleurotus eryngii polysaccharide antioxygen to olein. Polysaccharide of Agaricus blazei Murrill's hyphostroma and gyrophora's hyphostroma and cordyceps's hyphostroma and Lentinus edodes's hyphostroma were researched in this experiment.The effects of upwards sample were:polysaccharide of Pleurotus eryngii's hyphostroma and Agaricus blazei Murrill's hyphostroma were more effective than others when they were determined using bean oil;polysaccharide of Agaricus blazei Murrill's hyphostroma was more effective than's hyphostroma when they were determined using lardy. Although the effects of upwards polysaccharide were less than the compared Vitamin C,they have preferable effect.There were important signification for the developing pabulum and health care products.It was one of the researchful signification about this paper.The research of free radical usually focused on active oxygen free radical.The main active oxygen free radical existing in corpore were superoxide radical anion(O2-·)and hydroxyl free radical(OH·),Active oxygen free radical has something important with life phenomenon.So we use the polysaccharide of Pleurotus eryngiiremoval's rate to(OH·) and(O2-·)determining the ability of resisting active oxygen free radical,and compared the ability with other polysaccharide of edible mushrooms.The result indicated refined polysaccharide of Pleurotus eryngii's hyphostroma have more effective function in removing free radical than carpohole polysaccharide and row hyphostroma polysaccharide.The polysaccharide of Agaricus blazei Murrill's hyphostroma and polysaccharide of Pleurotus eryngii's hyphostroma have better effects in removing free radical than other polysaccharides.Through each index the result indicated resisting ability of polysaccharide of Pleurotus eryngii's hyphostroma was equal to the resisting ability of polysaccharide of Agaricus blazei Murrill's hyphostroma, and better than other polysaccharide's.The conclusion haven't found until we got it.Finally preliminary research on mixture polysaccharide was made in this experiment.The prefect combination were Agaricus blazei Murrill adding Lentinus edodes and Agaricus blazei Murrill adding Pleurotus eryngii,all of them have obvious antioxidation's effect.There wasn't research on the polysaccharide compounds of Pleurotus eryngii before this experiment.And the conclusion was mixture polysaccharide would reach better antioxidation's effect.
