Two polysaccharide has been isolated from the H.erinaceus(Bull:Fr.) Pers and H.caput-medusae(Bull.:Fr.) Pers.The well-distributed water soluble Fermentation Polysaccharide of Hericium caput-medusae is named HEP.The well-distributed water soluble Fermentation Polysaccharide of H.erinaceus(Bull:Fr.) Pers is named HMP.HEP and HMP were obtained by sepharose CL-6B column chromatography,and examined homogenous by cellulose acetate film electrophoresis.G.C.analysis indicated that HEP was composed of Ara and Glu in the molar ratio of 1:2.09.The HMP was composed of Glu.In the structure analysis of HEP and HMP,hydrolysis with acid,periodate oxidation, Smith degradation,IR,G.C.,methylation and GC-MS analysis were the principal methods.The results revealed HEP was a kind of low branched structure.The main chain is made up of(1-4)-linked Glu,(1-6)-linked Glu and(1-3)-linked Ara.The repeate struction may be-[Glu (1→6) Glu(1→4) Ara(1→3)]n-The results revealed HMP was a kind of non-branched structure.The main chain is made up of(1-4)-linked Glu and(1-3)-linked Glu.The repeate struction mey be-[[-(1→4) Glu)]3-(1→6) Glu]n-.
